This is on our menu plan this week.

 

 

Slow Cooker Shredded Chicken

 

3# boneless, skinless chicken breasts, trimmed of fat

1 1/2 C BBQ sauce (we use Sweet Baby Rays)

1/2 medium onion, grated (with juice)

1 T olive oil

1 T Worcestershire sauce

2 T brown sugar

 

  • Stir together all the sauce ingredients in slow cooker.
  • Add chicken and turn to coat.
  • Cover and cook on High 3-4 hours or low 6-7 hours.  Chicken is done when cooked through and easy to shred.
  • Remove chicken to a cutting board and shred each breast.
  • Place shredded chicken back in crockpot and stir in the yummy sauce.

 

Serves 8

 

Serve on buns with coleslaw. Below is one suggested to go with it.  I have made it and store bought slaw.  Both are good.

 

Creamy Coconut Coleslaw

1/2 medium green cabbage, thinly sliced

1/4 small purple cabbage, very thinly sliced

1/2 cup Real Mayo

1/4 cup Coconut milk (Original, unsweetened)

2 tsp granulated sugar

2 tsp apple cider vinegar or lemon juice (both work great!)

1 tsp Horseradish cream sauce

 
  • In a small bowl or measuring cup, whisk together 1/2 cup mayo, 1/4 cup coconut milk, 1 tsp horseradish sauce, 2 tsp sugar, 2 tsp apple cider vinegar or lemon juice 
  • In a medium bowl, combine thinly sliced green cabbage with very thinly sliced purple cabbage. 
  • Once the dressing is creamy and smooth, pour it over your prepared cabbage and stir well. Just before serving, give it a quick stir to make sure any dressing at the bottom coats the cabbage. So yummy!

@GenXmuse  Try adding mango or pineapple or both and use on fish tacos.

Thought those of you in the way of the snow storm might enjoy this chili recipe.  Stay safe!!!

 

Crock-Pot Chili
6 Servings

 

1 lb. ground beef
1/2 cup diced onion
1/4 cup diced celery
1 (15 1/2 oz.) can kidney beans (undrained)
1 (15 1/2 oz.) can pinto beans (undrained)
1 (15 oz.) can tomato sauce
1 (14 1/2 oz.) can diced tomatoes (undrained)
1/4 cup diced green chilies, drained
1 tsp. cumin
1 tsp. black pepper
2 tsp. salt
2 Tbsp. chili powder
1 cup water

 

Brown beef with onion and celery. Drain. Combine all ingredients with beef in a crock-pot. Stir. Cook on high heat for 3 to 4 hours, stirring occasionally.

I can make these cookies in my sleep.......

 

Chocolate-Chip OATMEAL Cookies

 

1 cup butter, softened

3/4 cup brown sugar

3/4 cup granulated sugar

1 1/2 teaspoons vanilla

2 eggs

2 cups flour

2 cups OATS, I use Quick-Cooking....regular ok

1 teaspoon baking soda

1 teaspoon salt

1 pkg. (12 oz.) chocolate chips (or 1 1/2 -2 cups from large bag)

 

Preheat oven to 350 degrees.  Mix together butter, sugars and vanilla.  Add eggs, mix; add flour, baking soda and salt, mix; add OATS, mix; and finally chocolate chips...mix!

 

Using cookie scoop, drop individual scoops on ungreased cookie sheet.  Bake 10-12 minutes.

 

Makes 3 1/2 to 4 dozen cookies.

CARROT Potato Casserole (We always make this when having ham - usually at a holiday.)

 

  • 3 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1-1/2 cups milk
  • 1 cup (4 ounces) shredded cheddar cheese, divided
  • 3 cups grated peeled uncooked potatoes
  • 1 cup grated CARROTS
  • 2 tablespoons grated onion

In a large saucepan, melt butter over medium heat. Whisk in the flour, salt and pepper until smooth. Gradually stir in milk. Bring to a boil; cook and stir for 2 minutes or until thickened. Reduce heat; add 1/2 cup cheese, stirring until melted. Add the potatoes, CARROTS and onion.

 

Transfer to a greased 8-in. square baking dish. Cover and bake at 350° for 1 hour. Sprinkle with the remaining cheese. Bake, uncovered, for 15 minutes longer or until potatoes are tender.

 

Yield: 6 servings.

Good and Easy Stew
8 Servings

 

2 1/2 lb. stew meat
1 (1.15 oz.) envelope dry onion soup mix
1/2 cup beef broth
1 (10 3/4 oz.) can cream of mushroom soup (undiluted)
1 (8 oz.) can mushroom stems and pieces, drained

 

Combine the ingredients. Place in a slow cooker, cover and cook on low for 8 to 12 hours. If desired, thicken gravy. Serve over noodles or mashed potatoes.

Starbuck's Lemon Loaf

1 1/2 cups flour

1/2 tsp. baking soda

1/2 tsp. baking powder

1/2 tsp. salt

3 eggs

1 cup of sugar

2 TBS. butter, softened

1 tsp. vanilla

1tsp. lemon extract

1/3 c. lemon juice

1/2 c. oil

Combine flour, baking soda, baking powder, and salt in a bowl.

Use a mixer to blend together the eggs, sugar, butter, vanilla, lemon extract, and lemon juice in a medium bowl.

Pour wet ingredients into the dry ingredients and blend until smooth.  Add oil and mix well.

Pour batter into a well-greased 9X5 inch loaf pan

Bake at 350 degrees for 45 min. or until toothpick inserted into the middle of the cake comes out clean

Lemon Icing Ingredients:

1 c. powdered sugar

2 TBS. milk, I used 2%

1/2 tsp. lemon extract

 

Make the lemon icing by combining all the icing ingredients in a small bowl with an electric mixer on low speed. When the loaf is cool, remove it from the pan and frost the top with the icing. Let the icing set up before slicing.
