I made Loaded Baked Potato Soup today too. So good. Tempted to made twice baked potatoes for Christmas. Since the soup turned out so well. I feel like I am on a roll.

This is the recipe I started out with.

But I changed it - I used a stick of butter.  And used the bacon grease to cook the onions. I used regular onions because I did not have any green onions. I used 5 cups of milk and 2 cups of chicken broth. I added garlic. And because I cooked the onions in bacon grease I did not add any salt.

 

  • 12 slices bacon
     
  • ⅔ cup butter
     
  • ⅔ cup all-purpose flour
     
  • 7 cups milk
     
  • 4 large baked potatoes, peeled and cubed 
     
  • 4 green onions, chopped
     
  • 1 ¼ cups shredded Cheddar cheese 
     
  • 1 cup sour cream
     
  • 1 teaspoon salt
     
  • 1 teaspoon ground black pepper


  • Place bacon in a large, deep skillet. Cook over medium heat until browned. Drain, crumble, and set aside.


  • Step 2

    In a stock pot or Dutch oven, melt the margarine over medium heat. Whisk in flour until smooth. Gradually stir in milk, whisking constantly until thickened. Stir in potatoes and onions. Bring to a boil, stirring frequently.


  • Step 3

    Reduce heat, and simmer 10 minutes. Mix in bacon, cheese, sour cream, salt, and pepper. Continue cooking, stirring frequently, until cheese is melted.

@Dazlin Do you wrap your potatoes in foil, or do you put them into the oven naked for baking the first time?

I do twice baked potatoes for Christmas.   The cheese and bacon bits are hand stirred.

@Dusty1 ...I dont wrap them...I. lightly oil and add salt and pepper.   Or you could lightly butter the skins, add salt/pepper and bake until fork tender.   Or just bake them plain...its just an option...but I don't foil them because you want the skin to be toasty to hold up to the filling.
