I hope you don't abandon this for the sake of fellow low carbers. I'm going back to this, in the past I  used this way of eating WOE, and had good success.

 

Yesterday, I dug out more of our books on LC, by George Stella. I never saw the show he had, wish I would have seen it for he is a chef and his wife a baker. I plan to try some of his recipes. He mentioned too, Elizabeth Levenson. I have to look up what I can find on her today too.

 

I know doing low carb doesn't leave me feeling hungry so much of the time. My husband needs to be on this and I probably need to too. Anyway, I hope we don't give up on this. Any time someone has to eat in certain way, to find good and tasty meals can be a real challenge. My next step, is to find a way to make salmon taste good to us both. I know it's supposed to be so good for you.

 

So onward and upward.

When I am looking for information I like to see what is online.

 

I belong to a few Yahoo Groups. You might want to look at "Healthy Recipes For Diabetic Friends". This is a moderated group with 12,800 members. You can request membership.

Update on DH's progress:  

 

We've been following his low carb diet together since the first of the month, 18 days now.  DH told me this morning he's lost 8 lbs. already.  Me?  Zilch. Nada. Zero. Nothing.

Yeah,, what Gokat said.    But keep up the good work.   Try not to be weighing yourself all the time.

 

Are you complimenting the good diet with some exercise, if you are able?   Even walking or going up and down the stairs a couple times a day is better than nothing.  Smiley Happy

Please forgive me if this recipe doesn't fit with low carb.  I am not very up on nutritional information...is 6g too high?  In the values it said carb choice 1/2 and that sounded low??

 

I was on the link of 3 ingredient recipes that @mtc posted and found my way to this recipe which seems delicious.  I have not tried it yet, just found it today.  But I thought of you!

 

Pork Medallions with Dijon-Mushroom Sauce

  • Prep Time 30 min                     Total Time 30 min                     Servings 2

A creamy sauce adds an elegant touch to a dinner ready in just 30 minutes.

Ingredients

5     teaspoons butter

1     shallot, finely chopped (2 tablespoons)

1     jar (4.5 oz) Green Giant™ sliced mushrooms, drained

1     teaspoon vegetable oil

1     pork tenderloin (1/2 to 3/4 lb), cut into 8 (3/4-inch-thick) slices

1/8  teaspoon salt

1/8  teaspoon pepper

1     tablespoon cognac or apple juice

1     tablespoon Dijon mustard

1/2  cup whipping cream

Fresh thyme sprigs or basil leaves, if desired

Directions

  • In 8-inch skillet, melt 2 teaspoons of the butter over medium heat. Add shallot and mushrooms; cook and stir 1 minute or until tender. Remove from skillet.
  • To same skillet, add remaining 3 teaspoons butter and the oil. Add pork; cook 8 to 10 minutes, turning slices halfway through cooking, until browned and no longer pink in center. Sprinkle with salt and pepper. Remove from skillet; cover to keep warm.
  • Gradually add cognac to same skillet; stir in mustard and cream. Heat to boiling; boil 1 to 2 minutes, stirring constantly, until slightly thickened. Add mushroom mixture; cook 1 minute or until thoroughly heated. Serve sauce over pork slices; garnish with thyme.

@IamMrsG I truly do think woman's metabolism just responds more slowly to diet changes and that is why men lose weight so quickly.  God bless you for the great job you are doing in caring for your husband and I wish you both the very best of health!

Our Son-(inlaw)  was recently diagnosed Type 1 in the last 2 months he had

mysteriously lost 25 lbs, very thirsty many trips to the restroom because of

water intake.   His bloodsugar count off the charts in the 700 range.

Tomorrow he will be going in to see a nutritionist.   I had just requested

for special recipes in the Wellness Formum....shall see what happens.

Type 1 as I understand it is a bit more complicated.  Anyhow, will check

out what people have posted here as well for idea's.   Have a great day !

Dear IamMrsG,

     I think that you will find spaghetti squash and cauliflower quite helpful. 

     Staying away from refined carbohydrates gives me more energy and I feel better in general when I lay off the starches and sugars.

     If you have certain dishes or cuisines that you and your family love, try to find a low carb version for it.  I actually find it fun to try to come up with versions of old favorites.  You would be surprised with what you can do.

     Good luck on your new adventure.

@Poodlepet2 You are a real source of information. We’re trying to curb DH’s excess protein, but as you eliminate one thing from your plate, it’s natural to want to compensate with another thing. This is a delicate balance we’re trying to figure out, and your posts have been helpful in explaining–and reminding me of–the fine tuning. Thank you, too, for the personal bolstering.

@Gokat Thank you for all the recipes with the nutritional facts you have been posting. It does help quite a lot, and I have been watching for them from you.

 

@qualitygal  I hope for the best for you and yours as you return to low carb eating. My DH’s diagnosis of being borderline diabetic gives him a limit of 60 grams per meal, which is evidently quite a bit higher than what actual diabetics are permitted. Nonetheless, we’ve had a few challenges adjusting some of our favorite dishes, so I shudder to think how much more challenging it could be.  Besides for keeping him happy (grouse-free), my hope, of course, is to avoid getting to that point. Prevention being worth a pound of cure, and all that.

Yes, that’s the way it’s always been between the two of us, even when we were much younger. At least I can say I didn't  gain this month. That’s somethin’, isn’t it?  Woman Frustrated

@Writer with Flair  I bought a spaghetti squash late last week, but have not used it yet. DH gave it a doubtful glance, arched eyebrow and all. Just as a mother does with picky children, I’m planning to sneak it something. Question for you: Would it hide well mixed with a little real spaghetti?  Or, as I suspect, are the textures too dissimilar?
