Low Carb Eggplant Parmesan

Low Carb Eggplant Parmesan (makes 4 servings)

(my recipe)

 

14 oz. eggplant, sliced in circles 1/2" thick

2 eggs, beaten 

1 cup crushed pork rinds 

1/2 cup shredded Parmigiana Regianno

1 Tablespoon Italian Seasoning

3 Tablespoons butter

1 cup RAO's Marinara (or preferred low carb marinara sauce)

1 cup shredded mozzarella

 

Preheat oven to 400*

 

Wash and slice eggplant - lay slices on paper towel, sprinkle with salt, and allow moisture to dry out for about 30 mins. Press paper towel on top before starting the assembly.  

 

Combine pork rinds, Parmigiano Reggiano cheese, and Italian seasoning. 

Put the butter on sheet pan and place in oven to melt.  Remove pan from oven and create your work space. 

 

Dip eggplant slices in the beaten egg and place on buttered sheet pan.

 

Sprinkle the pork rind & cheese mixture on the eggplant slices. 

 

Bake at 400* for about 20-25 minutes.  

 

Remove from oven and transfer eggplant slices to a prepared baking dish. 

Top with marinara sauce and sprinkle with mozzarella.

  

Return to oven and bake about 5 mins, or so, until cheese is melted.

Crushed pork rinds?  Can you suggest a substitute, please?

I understand, @ValuSkr, I was turned off by them too at one point.  They really aren't  bad. For a substitute, you might try almond flour.

I think the pork rinds are used to keep it low carb--no bread.  

 

That isn't a concern for me and I don't eat pork so I would use panko breadcrumbs instead.

Awesome, @petitelady7!  I've been following clean, healthy keto for a little over two years, have lost 145 lbs.  if you need any help, I'd be privileged to be a resource for you.

@JeanLouiseFinch thank you for sharing!  I've used almond flour before and wasn't crazy about it, so I will try using pork rinds.  Eggplant parm is one of my favorites.  I just made some fresh tomato sauce too Smiley Happy

@JeanLouiseFinch This sounds delicious!  I will defintely try this soon.

 

For anyone new to crushed pork rinds, Pork King Good and Pork Panko sell them on Amazon with different seasonsings.  They're great with anything that would normally use bread crumbs or panko.  We use them to make Chicken Parm and they're great.

 

I dislike whole pork rinds, but the crushed ones are great for cooking low carb/keto.  It's probably cheaper to crush your own, but I'm lazy Smiley Happy
