years ago, my mother made a sweet/sour recipe of potatoes and leftover pot roast.  It was like a hash.  Anyone have something like this?

Making a basic skillet hash is easy once you figure out what your mother used as the sweet and sour ingredients.

Sweet and sour potatoes is a German recipe that is made with equal amounts of sugar and vinegar added to the potatoes, along with bacon.

 

Alternatively, the pot roast may be a sweet and sour pot roast (sauerbraten), another German recipe.  

Google Southern Beef Hash for a recipe using leftover pot roast and potatoes.  Add some sugar and vinegar and, voila.

German Potato Salad is warm and has a sweet and sour sauce.  That could serve as a base, cutting the potatoes in a smaller dice, and then adding your diced leftover pot roast to it.
