Have alot of lettuce and kale in the garden...any good recipes?

A friend of mine used to put lettuce in a soup. I tried it once ...
Salads at every meal! Which wouldn't bother me too much, since green leaves are my favorite food. I had so much, that one little flaw in the leaf was outta there.
I used to grow bushels of lettuce, every variety, and my crops were so huge! My rabbit and I couldn't keep up with it! Apart from road-side selling and giving it away to every neighbor within a mile radius, I really didn't know what else to do with it all.

I like to make kale smoothies, but I don't have a recipe. I toss some kale into my Ninja, add frozen fruit, a scoop of unflavored protein powder, and some Watermelon Cucumber Cooler juice from Trader Joe's and whirl it all up.

I have not tried this yet, but it is intriguing, I think.
A Kale-based Dinner

My favorite recipe is actually very simple (and tasty!). I saute an onion, add 1 can low sodium black beans, then 1 can low sodium diced tomato, then 2 sweet potatoes that are partially cooked in microwave and diced, and after that is heated I add the kale (it cooks down a ton so it will look like a huge amount but end up not being as big once cooked--kinda like spinach.) I use 3 bunches of kale. You just rinse it and pull it off the stem so you use the leafy green part. If you need to--add a little water to help the kale steam.
Let the kale cook down and you are done. My husband adds Parmesan cheese on top of his. Super healthy and full of antioxidants.
I have substituted brown rice sometimes instead of the sweet potato.

It may be a bit much for the hot Summer months, but this soup is delicious.
Zuppa Toscana

1 pound Italian sausage
3/4 teaspoon crushed red pepper flakes (optional..I don't use)
6 slices bacon, torn or cut into smaller pieces
1 large onion, diced
1 clove of garlic, minced
2 - 2 ½ quarts (8 - 10 cups) chicken broth
6 cups of potatoes, thinly sliced with skin on..russet or Yukon gold are good (about 3 russets)
1 cup half ‘n half
2- 3 cups of kale, in bite size pieces
top with grated Parmesan cheese
Remove the Italian sausage from casings and brown with red pepper flakes in a large pot. Drain and set aside.
Cook the bacon in the same pot until crisp. Drain, reserve about 2 tablespoons of drippings with the bacon in the pot. Stir in the onions and garlic; cook until onions are soft, about 5 minutes.
Pour the chicken broth into the pot with the bacon and onion; bring to a boil.
Add the potatoes, and cook until tender, about 20 minutes on medium heat. Reduce the heat to low and stir in the half n half and the cooked sausage; heat through; don't boil.
Add the kale and let cook until desired tenderness...5-10 minutes.
Grate Parmesan cheese on top of servings.

Google .....Melt in your mouth Kale salad...foodbabe.com will come up...This salad is so good you cannot tell it is Kale....I use regular kale not dinosour type.

KALE SAUTE
(Easy and delicious)..You can also add a can of white canneloni beans, but I like it best prepared just as is)
1 1/2 pounds young kale, stems and leaves coarsely chopped
3 tablespoons olive oil
2 or 3 cloves garlic, finely sliced
1/2 cup chicken stock
Salt and pepper
2 tablespoons red wine vinegar
Directions
Heat olive oil in a large saucepan over medium-high heat. Add the garlic and cook until soft, but not colored. Raise heat to high, add the stock and kale and toss to combine. Cover and cook for 5 minutes. Remove cover and continue to cook, stirring until all the liquid has evaporated. Season with salt and pepper to taste and add vinegar.

I have been buying kale to put in our smoothies with fruit.
I need to use the rest of it up & will be making one of these recipes tonight (along with the marinara sauce from the other thread).
Mmmmmmmmmm, I just don't know which one to choose, they all sound so good.
