Oh geez, sometimes this website.  Anyway, I edited to add the Pumpkin Pie Spice Mix and it freaked out on me.

 

Here's the recipe I use for Pumpkin Pie Spice Mix

 

  • 4T Cinnamon
  • 4t Nutmeg
  • 4t Ginger
  • 3t Allspice

ChiliPepper - Yeah, that was weird.  As soon as I entered the post I realized that I wanted to put the spice recipe in there, too, so I went back and hit 'edit post'.  

 

After I typed it in something weird happened and I saw that my original post was repeated.  So I deleted the first one, to keep the second one that had the edit in it and after I entered through that it was just the original one WITHOUT the edit.  D'oh!

Had to make pumpkin bread after seeing this. YUM!!! It's sooooooooo good. The cloves & cinnamon from Penzey's smells heavenly. Have been using the recipe in the Betty Crocker Cookbook for years. I have been using organic canola oil but it's hard to find.

 

 

1 c canola oil
2 2/3 c sugar
4 eggs
1 can pumpkin (1 lb)
2/3 c water
3 1/3 c all purpose flour
2 tsp soda
1 1/2 tsp salt
1/2 tsp baking powder
1 tsp cinnamon
1 tsp cloves
1 c chopped walnuts
 
Heat Oven to 350° Bake 70 mins or until toothpick comes out clean
Grease 2 -  9 x 5 x 3 loaf pans
In large bowl mix oil & sugar, stir in eggs, pumpkin & water
Blend in flour, soda, salt, baking powder, cinnamon & cloves
Stir in nuts

Thanks. I may try that instead of using the cloves & cinnamon in the recipe that I posted. I have all of those ingredients from Penzey's.

Thanks, Nightowlz!  I like this mix.  You can always taste it and see if you like a little more of something or other.  

 

I also buy from Penzey's and use the Ceylon Cinnamon, since it's the only cinnamon they have that isn't cassia.    I know that (even though I forgot why) cassia isn't good for me or the bird and I use cinnamon in his birdie bread too, so I try to avoid it altogether.  Smiley Happy
