Looking for apple crisp recipe

Hi...I'm wondering if anyone has an easy apple crisp recipe that uses shortbread cookies for the topping? I happen to have some shortbread cookies and a bunch of apples so it got me wondering if I could just make a quick crisp using what I have rather then the traditional oat topping. Thank you in advance.

@NYC2AZ   I have never used the traditional oat topping.  I have an old family recipe that I prefer and my family loves it.  This is for a large baking dish.   Just rub together

1-1/2 cups of flour, 2 cups of sugar and 2/3 cups of butter.  It will be crumbly.  Drop the mixture over the apples and bake 350 for 55 minutes.  I also sprinkle a little cinnamon on top....   I like to combine Honeycrisp and Granny Smith apples for a sweet/tart flavor.  
I have never tried the shortbread cookies...but it sounds interesting...

I misread your original post about wanting to use shortbread in the topping.  I don't have a recipe that uses that as an ingredient.  But Zhills' recipe looks tasty.

I found one.  It gives instructions for the topping!

 

Farmbake Butter Shortbread Apple Crumble

 

 

Ingredients

  • 1kg Granny Smith apples, peeled and cored
  • 80g butter, softened
  • 1/2 cup brown sugar
  • 310g packet Arnott's Farmbake Butter Shortbread cookies
  • 1 tsp cinnamon
  • ½ cup shredded coconut

Preparation

Step 1

Pre heat oven to 180°C.

Step 2

Slice apples into 1/8 pieces. Place in a medium saucepan with 1 tablespoon of water, cover with lid and cook for 10 minutes. Remove lid and let sit for 5 mins.

Step 3

Meanwhile place Arnott’s Farmbake Butter Shortbread cookies and cinnamon in the bowl of the food processor and process until it resembles crumbs. Set aside.

Step 4

Place butter and sugar in a large bowl and using your hands, rub together until combined. Add cookie crumbs and coconut. Mix until well combined.

Step 5

Place apple mixture into a 1.5 litre baking dish then top with crumble mixture. Bake for 25 mins or until golden.

Notes

  • Serve with cream or ice cream or vanilla yogurt.
  • You can try with different apples if you don’t have Granny Smith or canned apples for a shortcut.

I've made a lot of apple crisp's as it's my bf's favorite.

The absolute best one, in my opinion, is Ina Garten's.

Granted I've tweeked it here and there, always good ...I've used 1/2 the amount of butter she does and it's still delicious.

 

Bf just doesn't like to taste any citrus in his apple crisp, so I really don't put what she says to (I try to sneak in a little, he can taste any little bit!) However...do it as she does...the citrus really makes it delicious, and mixes so beautifully with the cinnamon spices. When I've used all the citrus she has in her recipe is when I've loved it best.

 

Hers is a traditional oat topping, but I believe people have made toppings that don't have oats in it...I think as others may have said here, there are other ways to make the crisp topping. Mmmmn, now I want to make an apple crisp!

The kind of apples matters too...Ina says she uses mcintosh or mccoun...I've always used empire or cortland.

I found this recipe that sounds so good I'm going to try it too  Woman LOL

 

I don't know what cookies you have, but it sounds like people have used Girl Scout shortbread cookies, Walker shortbread cookies, or any other including Lorna Doones - or even Oatmeal cookies - so it sounds pretty forgiving regarding that:

 

INGREDIENTS

  • 6 Tablespoons butter (or margarine)
  • 1(10 ounce) box shortbread cookies, crushed
  • 1⁄2 cup sugar
  • teaspoons cinnamon
  • cups tart apples (sliced)
  • tablespoon sugar
  • tablespoon lemon juice
  • 1⁄3 cup almonds, chopped

DIRECTIONS

  • Melt 6 tablesppons of butter in a large skillet over medium heat.
  • Add cookie crumbs, 1/2 cup sugar and cinnamon.
  • Stir over medium heat for 3 minutes.
  • Transfer crumbs to a bowl and set aside.
  • Add remaining 2 tbls. butter, the sliced apples, 1 tbls. sugar and lemon juice to skillet.
  • Cover and cook over medium heat until apples are tender, about 10 minutes, stirring frequently.
  • Heat oven to 375 degrees.
  • In a 2 quart casserole dish, layer half of the apples and half of the crumbs.
  • Top with remaining apples, crumbs and then the almonds.
  • Bake for 25-30 minutes or until crumbs are golden brown.
  • Serve warm with vanilla ice cream.

Thank you, everyone, for your responses. I have the Walker shortbread but I'm assuming any shortbread could work. I'm going to make one of these this week....thank you so much! If anyone else makes a crisp, I hope you enjoy it!

@Happy2BHere  Thanks for sharing your recipe.  I bet I could make that diabetic friendly by using Voortman's Sugar Free cookies and a touch of artificial sweetner

I think that needs more sugar in the base of the recipe with apples, maybe I just like sweet things lol probably not a good habit for me lol

I always use a mix of apples, (unpeeled) , cinnamon, sugar and last time I drizzled some pure maple syrup over the apples before I put the topping on.  I always use oats/flour/butter/brown sugar and cinnamon for topping. Pretty basic. Very easy and very delish.
