Looking for a wholesome, but low cal muffin recipe.

By "wholesome" I mean no artificial sweeteners or ingredients.

 

Does anyone have a recipe like this?

I make this often. We like it because it isn't too-too sweet! 

BLUEBERRY OAT MUFFINS

 

PREHEAT OVEN TO 400

 

MIX IN ONE BOWL:

1 1/4 cup flour

1 cup oats

1/2 cup sugar

1 tsp baking powder

1/4 tsp salt

3/4 tsp baking soda

 

IN SECOND SMALLER BOWL, MIX:

1 egg

1/2 cup water

1/3 cup oil (I add an extra 2 Tb. Oil)

 

STIR WET INTO DRY INGREDIENTS.

 

FOLD IN 1 cup blueberries (I keep berries in freezer, and you can stir in frozen berries.)

 

SPRAY MUFFIN PAN and fill muffin cups about 3/4 full. Mix a bit of sugar and cinnamon in a cup and top each muffin with about 1/8 tsp cinnamon sugar.

 

BAKE 400 deg 18-20 mins.

Have you ever made it substituting apple sauce for the oil?

I do that with some recipes but have not tried it with this one because we like it as it is. I should try it, but with the oats, I wondered if the muffins would be too dry? It's a great idea. If you do it, let me know how the muffins come out. I do use half olive oil and half canola so it isn't all canola oil. I have made these with chopped apple versus blueberries, but my husband prefers his blueberries!

I will surely let you know when I try them.  I wound up buying Thomas's blueberry English muffins at the store today, so I probably won't be trying the recipe until next week... but then you never know around here!

That's a great idea!  I sometimes use applesauce, but this time of year the pumpkin sounds delightful!  Thank you!

There are a zillion recipes out there if you Google,

'plant based low fat muffins'.  You'll some with beans (yes!),

applesauce, potato starch...all replacing the fat & eggs.

These recipes are generally low fat (no oil!) and are very moist.

 

Here's a recipe I've tried...HTH!

Tip: Mix dry & wet separately, then combined without overmixing...that causes a tougher baked item.

I don't have the calorie count for these, but can vouch for their flavor.

 

Bran Flax Muffins

 

1 ½ cups unbleached white flour
3/4 cup flaxseed meal
3/4 cup oat bran
1 cup brown sugar, packed
2 teaspoons baking soda
1 teaspoon baking powder
½ teaspoon salt
2 teaspoons cinnamon
1 ½ cups carrots, shredded
2 apples, peeled and shredded
½ cup raisins (optional)
1 cup nuts, chopped
3/4 cup milk
2 eggs, beaten
1 teaspoon vanilla

 

Mix flour, flaxseed meal, oat bran, brown sugar, baking soda, baking powder, salt and cinnamon in a large bowl. Stir in carrots, apples, raisins (if desired) and nuts.

 

Combine milk, beaten eggs and vanilla. Pour liquid ingredients into dry ingredients. Stir until ingredients are moistened. Do not over-mix.

Fill muffin cups 3/4 full. Bake at 350º for 15-20 minutes.

 

Yields: about 18 medium muffins

Bran muffins look good (I would sub out the eggs/milk),

but the savory muffins....oooof.

10 tablespoons of butter & 1.5 cups plain yogurt are

very 'calorie expensive'...not a low cal option which the OP desired.
