Looking For Tried and True Authentic "Red Enchilada Sauce"

I have a craving for beef enchiladas, and I want to make the sauce from scratch, not a can.

I searched, and found a couple recipes that sound like they might be good, but I wanted to check with the good cooks here first for tried and true recipes.

Have you made any that tastes like authentic Mexican red enchilada sauce? TIA
