Stuffed Pepper Soup
2 pounds ground beef
1 green bell pepper, chopped
1 (29 ounce) can tomato sauce
1 (29 ounce) can diced tomatoes
2 packets low sodium beef bouillon granules
1/4 cup packed brown sugar
2 teaspoons salt
1 teaspoon ground black pepper
1 tablespoon soy sauce
2 cups cooked white rice
In a Dutch oven brown beef over medium high heat. Drain off any fat.
Add the peppers to the browned meat and sauté for 3 minutes.
Stir in the tomato sauce, diced tomatoes with juice, bouillon cubes, brown sugar, salt, pepper and soy sauce.
Reduce heat to low, cover and simmer for 30 to 45 minutes.
Stir in rice and heat through. ~posted by golfmom

I think this is Snuggle Bunny's recipe for Stuffed Pepper soup. I may have tweaked it just a little bit. It's delicious and this is the time of year for soups.
1.5 lb. lean ground beef (prefer 80% chuck)
1- 28 oz. can tomato sauce
1- 28 oz. can diced tomatoes
fresh tomatoes diced (just a few, if available)
2 c. diced green peppers (or green & red)
1 c. diced onions
2 packets beef bouillon granules
1/2 c. packed brown sugar
1 Tbsp. parsley
½ teas. marjoram
½ teas. oregano
½ teas. basil
2 teas. salt
1 teas. pepper
32 oz. beef broth
1 c. instant rice ---- (added after one hour on high)
Brown beef in large pan.Place in crock pot and add remaining ingredients (except rice).Stir everything together.Set crock pot on HIGH and cookfor one hour.Add 1 cup rice.Turn down to LOW and cook for another 2 hours.Enjoy … it’s delicious. AnikaBrodie

The only time I ever make stuffed pepper soup is when I have left over stuffed peppers - then I cut them up in bite sized peices and put them in the crockpot with a qt or so of beef broth and cook all day on low.

Katey, I do not parboil the peppers (use red & green). The recipe was originally submitted by Snuggle Bunny but I tweaked it a little. It is very good on a cold winter day. It freezes well if you make a large amount. ~~ AB

Katey, the brown sugar brings out the flacor of the tomato and beef and cuts down on the acidity. It does not make the soup sweet. I see most of the recipes call for brown sugar. It makes the sosup richer than regular sugar that you would use in spaghetti sauce at times. Happy souping.
