Lofthouse Cookies and Frosting

This was posted many years ago, The recipe is spot on for taste.

One year I made 100 dz. for christmas. I just used store frosting & colored it with food

coloring gels & different sprinkles. And I didn't use a mixer just a wooden spoon.

Lofthouse cookies and Frosting

1 French vanilla cake mix

1/2 cup Plus 3 Tbsp. AP flour

3 lg. eggs

1/3 cup veg. oil

Frosting

1/2 cup unsalted butter, soft.

1/3 cup shorteninh

1 tsp. vanilla

3 Tbsp. milk

4 cups powdered sugar

To make cookies combine ingredients with a mixer. The dough will be stiff enough to roll into 1-inch balls. Place balls on a parchment lined cookie sheet, in a preheated 

 325* oven. Flatten balls to about a 1/2 -inch thick. I just use a glass dipped in flour.

Bake for about 12-14 min. or until somewhat firm in the center. Remove from oven and cool complelety before frosting. Make frosting by combining all ingredients with

mixer until smooth, add food coloring if desired. Spread on cookies, add sprinkles if you like. When frosting has set, store in a tightly sealed plastic container ( such as LNL) This will give the cookies their cakey like texture after several hrs. Make approx. 3 dz.

@YouGoGirl1 I bought these at Safeway once. Way too sweet for me.

Thanks for the recipe, we like the smaller, bite size ones but we don't see them often.

 

Yes they are sweet, just one bite is generally all I need for my sweet tooth.

The frosting makes them much sweeter, but I also make them without frosting, great with a cup of coffee..
