I was looking for a potato recipe for the Recipe Game Thread and found this recipe I will be trying this weekend for a football watching thing at our house. I'm going to make the recipe below, as well as a couple other versions. I'm going to practice ahead of time w/ using a pan liner vs just on the baking sheet. It's so annoying when the potato sticks to the pan because I did not use enough spray/oil/butter.
Buffalo Chicken Version - Ranch or Bluecheese Dressing on bottom layer, with shredded chicken in Frank's hot sauce on top.
Garlic Version - Bousin spread if they have it, with chives on top.
Loaded Baked Potato Rounds - Taste of Home
Ingredients - For Potato Rounds
4 medium Potatoes (about 7 ounces each), cut into 1/4-inch slices
3 tablespoons olive oil
1 tablespoon minced fresh rosemary or 1 teaspoon dried rosemary, crushed
1 teaspoon kosher salt
1/4 teaspoon garlic powder
1/4 teaspoon coarsely ground pepper
Ingredients - For Topping
3/4 cup shredded part-skim mozzarella cheese
3/4 cup sour cream
2 green onions, sliced
1/2 teaspoon kosher salt
1/8 teaspoon pepper
6 bacon strips, cooked and crumbled
Directions
Preheat oven to 425°. Toss together potato rounds, olive oil and seasonings. Place potato rounds on greased 15x10x1-in. pans. Roast until tender, 12-15 minutes.
Mix the first 5 topping ingredients; spoon onto potato slices. Top with crumbled bacon. Transfer to serving platters. Serve immediately.

These are just like a bite size potato skin ... so I'm thinking they're going to be tasty little bites. I guess the size will depend on the size of the potato I use. I think I want to go for a one-bite size, for easier consumption.
I'm looking forward to a test drive, purely for quality control purposes.

@kate2357 as much as you cook im surprised you dont always use sheet pan liners. I hate fighting clean up. I buy unbleached pre-cut parchment paper ( i despise wrestling with a roll ) and i get them pretty inexpesively from webstaurant dot com
If youve never been to that site its amazing.

I use parchment paper quite often. But sometimes things brown up better on bottom w/o a liner. I was going to experiment because the recipe calls for greased pan and I wanted to see which way turned out better.
I buy the parchment paper on a roll and never had much of an issue with it. I do appreciate the ease of clean up as well as the nonstick aspect of parchment and because I can throw it into yardwaste bin.

I've made roasted potato rounds too, just never thought to use them as appetizers. One of those things you wonder why you didn't think of it yourself. Lol.

I agree, and also about the size. I think these are so versatile and lend themselves to all sorts of toppings.
I have to say, I love the recipes posters share here, whether they create them or find them. And these potato bites? I can't imagine anyone not liking them!
