three bean soup

1 cup diced carrots. 3T.olive oil 2 cups chopped onion

2 or 3 minced garlic 1-28oz. tomatoes 6 or 7 cups chicken broth

3 cans of any beans. ( The following is all to taste and optional )

RED PEPPER FLAKES, PARSLEY,PARMESAN CHEESE. ADD ANYTHING ELSE SUCH AS HAM, CHICKEN, GREENS, ETC. I DRAIN THE BLACK BEANS WHEN I USE THEM, BUT NOT THE OTHERS. THE CHOICE IS UP TO YOU. LESS SALTY IF ALL ARE DRAINED.

HEAT OIL IN A LG. POT. ADD ONION ANC CARROTS AND SAUTE 3 TO 4 MINUTES. ADD GARLIC AND PEPPER FLAKES. ADD TOMATOES AND BROTH, BRING TO A BOIL, REDUCE HEAT AND SIMMER 15 MIN. ADD BEANS AND ANY ADDITIONAL INGREDIENTS OF YOUR CHOICE AND COOK ANOTHER 15 MINUTES.
