When we first started doing some vegetarian meals we found a great recipe for a meat loaf substitute using lima beans and walnuts, maybe eggs. We have looked thru all our old books and can not find it.

Anyone recognize the recipe or the source

or have a good recipe to suggest?

Re: Lima bean and walnut loaf

I have a version that even meat lovers enjoy

I usually make a mushroom gravy.  It is still calorie laden, but all vegetarian.  My husband I are vegetarians and I have fed this to our omnivore family members to rave reviews!
