FYI...............Lentils to do not require soaking like other pulses. Rinse your lentils with fresh water before boiling to remove any dust or debris. Cook on a stovetop, using 3 cups of liquid (water, stock, etc) to 1 cup of dry lentils. Be sure to use a large enough saucepan as the lentils will double or triple in size.

  You are correct, @ahoymate. Soaking lentils is not necessary, but there are benefits to soaking. I'll explain.

 

  Traditionally, le Puy lentils are soaked to neutralize phytic acid, so your body can absorb the minerals in the lentils.

 

  Soaking activates an enzyme phytase, that aids in breaking down phytic acid for absorption of calcium, iron, and zinc.

 

  Soaking also triggers amylase that breaks down complex starch in lentils for easier digestion.

 

  Lentils and other legumes contain oligosaccharides, a type of complex sugar, responsible for bloating and gas.

 

  Soaking removes these gas-causing elements.

 

  Soaking is not necessary for split peas either, but I soak

those also, for the above digestive benefits.

@Enufstuff  @SportyShorty07   I wanted to let you know that I ordered the lentils you recommended from Amazon and made this dish for dinner tonight.

 

I really liked it, as did my granddaughter.  The mustard really brought out the flavor.

 

My picky husband ate it as soon as I removed it from the stove...no mustard or crusty bread.  He wasn't impressed, but he isn't a bean or lentil person.

 

My granddaughter took the left overs with her.  She is in college, home for spring break and was thrilled to get        "real food."

 

Thank you for the recipe.  It was different...appreciated by me that it was gluten free and very good.

@Carmie  That's so wonderful that you cooked and enjoyed @Enufstuff 's Lentils Du Puy Smiley Very Happy!  It sounds like it was such a crowd pleaser for you and your family! Good for you for cooking it and that's so sweet that you gave your college student granddaughter left overs from it Smiley HappyHeart.   Enufstuff is a  very gifted cook and when she told me about her lentils du puy recipe, I told her I'd love to try it someday! I'm so grateful that she posted her recipe and I'm going to cook it for the first time sometime this month!  Lentils are so delicious and nutricious.
