Lentils Du Puy is a traditional French dish. It is a nice hearty winter meal along with some crusty French or Italian bread.
It is necessary to use green lentils. They hold their shape and don't get mushy when cooked.
Lentils from the Puy region of France are the best to use. I get
Sabarot brand green lentils from Puy. I find them on Amazon.
They are a little pricey, but worth it. This recipe makes six generous servings.
Lentils Du Puy
16-17 oz. (2 1/2 cups lentils) 6-8 sweet Italian sausages
2 carrots, chopped olive oil
2 celery stalks, chopped water
1 onion, chopped 2 1/2 cups chicken broth
1-2 garlic cloves, minced (or a 16 oz. can of chicken
broth & 1/2 cup water)
1 sprig rosemary 1-2 bay leaves
2 tsp. thyme 2 tsp. Dijon mustard
* First step is to soak lentils in 2 1/2 cups water for
30 minutes. Set aside.
* In a large, deep pot, brown sausages in 2 Tblsp. olive oil.
Remove sausages from pan & set aside.
* If needed, add 1 tblsp. olive oil to pan and saute chopped onion, carrots and celery until soft, to make a mirepoix.
Then add the minced garlic.
* Drain lentils and add to pan of vegetables.
Add 2 1/2 cups of water and 2 1/2 cups of chicken broth,
( or 1 can chicken broth +
1/2 cup water)
(You want to use a total of 5 cups of liquid.)
* Add sausages to pan and stir in 2 tsp. thyme, 1-2 bay
leaves and a sprig of rosemary.
* Bring to a boil. Lower heat and simmer, covered,
30-40 minutes. (I cook 30 minutes) Remove bay leaves
rosemary stems.
* Add 2 tsp. Dijon mustard and serve with nice crusty bread.

@Carmie You are welcome. I had never cooked lentils before this recipe.
We enjoyed it and even my "meat and potatoes" guy liked it.
