LENA'S VANILLA ICE CREAM--I am posting this again. It "disappeared" as I was entering the info so hope that it does not appear twice. Lena and I taught together for many years. This is a wonderful summer treat. Our weather here is getting cold--but for those of you who still have summer weather there is still time to enjoy it. Lena and her husband often invited our family to enjoy their boat on the lake. We would end our day with hamburgers on the grill and her wonderful vanilla ice cream. This does require the old fashioned ice cream freezer with the cannister and paddle and ice/salt to freeze it.
2 1/2 cups of sugar
2 half pints of whipping cream
1 small can Pet evaporated milk
Add half and half to the whipping cream and Pet evaporated milk to make 5 cups
5 cups of whole milk (can use 2%)
3 TBSP Vanilla
Put above ingredients on the stove, heat to lukewarm, stirring and mixing well.
Dissolve 6 junket tablets in a very small amount of water. Stir dissolved junket mixture into the warm milk. Remove from heat and put into a COLD freezer container. Let set in the freezer until thick before freezing. Place in ice cream freezer (electric or hand crank) and pack with salt and ice. Delicious!
