Lemon pie question...

I was watching a video by Brenda Gantt on Facebook...she was making an ''Ice Box Lemon Pie''. All she did was add lemon juice, egg yokes and a can of sweetened condensed milk to the filling and blend it.  She said the lemon juice  would ''cook'' the eggs.  She then topped it with meringue and browned it....no cooking of the filling needed, she said.  I have never made a pie with eggs in it that wasn't 'cooked'  Do you think it is safe to eat??

The yokes would "cook" the eggs?  Not the lemon juice?  Sorry, not eating anything that has raw egg yokes in it.

For me, it has to semitransparent.  Which means corn starch and precooked.

 

I shudder with the sweetened condensed milk.  Just me.

When I make icebox lemon pie, I whisk the filling (sweetened condensed milk, lemon juice, and egg yolks) together, pour it into the crust, and bake the pie for 15 minutes.  It is cooled in the refrigerator.

From LSU Agriculture Dept., "To make key lime or lemon ice box pie safely, heat the lime or lemon juice with the raw egg yolks in a pan on the stove, stirring constantly, until the mixture reaches 160 degrees. Then combine it with the sweetened condensed milk and pour it into a baked pie crust."

 

Do not let the temperature exceed 160 degrees or you will have scrambled eggs!  Not good in a pie!

 

When this recipe emerged in the 30s and again in the 50s.  Most people had access to fresh eggs.

The way this year has been so far, I'm not gonna be eating raw egg yolk. It may be fine, but why should we risk getting salmonella at a time like this?

I watched the video over the weekend.  I wouldn't be eating it without it being cooked first.

Edwards has a fantastic lemon meringue pie if you want to save time.  It's well known.

Citric acid in the lemon will kill and stop bacteria, but I would still use a recipe that cooked the filling if I used eggs.
