Can you use lemon juice instead of lemon extract in cookies? I have lemon juice but not extract. Hate to buy the extract & have no other use for it.

If it were me ,I would add some lemon zest along with the juice.

Yeah, I agree with the Kitty.  That will make them more lemony, as the extract would have. 

 

BTW, I keep a bottle of Lemon Extract that, since I didn't see it at my store, I got at Amazon a while back.  Smiley Happy

 

I love lemon!   Add coconut and I'm the happiest chicken ever.  Smiley Very Happy

 Definitely eat. Lemon juice would not impart enough flavor.

Oh, i wouldn’t.  Lemon juice isn’t even close to lemon extract.  I don’t think they are interchangeable, but that doesn’t mean your baked goods won’t taste good. They just won’t taste as they should.

 

You can always substitute another extract flavor like orange, raspberry or vanilla.
