Lemon Coconut Bars
Crust:
1 cup sifted flour
1/4 cup sifted confectioners sugar
1/2 cup butter
Filling:
3/4 cup sugar
1/4 cup sifted flour
1/2 tsp baking powder
2 eggs, beaten
2 Tbsp lemon juice
1 tsp grated lemon rind
1/2 cup flaked coconut
Topping:
Sifted confectioners sugar
For crust, combine flour and sugar, cut in butter until mixture resembles coarse meal. Pat mixture into 9 inch square pan. Bake for 15 minutes at 350 degrees. Cool.
Start the filling while crust is cooling. Combine sugar, flour, and baking powder; set aside. Beat eggs until light and lemon colored. Add dry mixture. Blend thoroughly. Then add lemon juice, lemon rind and coconut. Spread this mixture on crust.
Bake at 350 degrees for 25 minutes or until lightly browned on top. Cool.
Sprinkle lightly with confectioners sugar.
