This recipe does sound yummy, @house_cat.
You mentioned you used chicken breasts. Did you cook them for the same amount of time?

I browned them, then let them cook in the sauce until it was bubbly and into the oven for about 20 minutes. I used a thermometer to make sure they had reached 165 degrees.

That looks wonderful but we no longer eat poultry. Do you think it would work with the right size of pork tenderloin rounds?
It's similar to piccata and I use pork for that so I'm thinking.........

Fixed this tonight....very good....DH said he liked it and remembered his mother fixing spinach! Who knew!? And, I have avoided fixing spinach for him all these years! Ha! Anyway, thanks for sharing recipe.....different and very tasty!
