Leftover pork tenderloin ideas

I roasted 2 pork tenderloins and wonder if anyone has ideas for the leftovers?  Always looking for something new!

I like it on a homemade roll with bbq sauce. Yum!!!

@bargainsgirlI saw this on The Kitchen, made by Katie Lee Biegel.  The recipe calls for rotiserrie chicken, but I think it would be just as good with pork.  I just added this recipe to my "try it" list.

@bargainsgirl - we typically use pork tenderloin leftovers for sandwiches. 

Or, shred it and mix with bbq sauce for pulled pork sandwiches 

 

And it's FABULOUS for Sweet & Sour Pork;

  • cut the tenderloin into bite sized pieces
  • chop 1 onion and 1 green bell pepper, sauté 5 min
  • add pork to sauté 
  • Add the sweet & sour sauce: 20 ounce can pineapple chunks with juice, 3/4 cup water, 1/4 cup white vinegar, 3 Tbsp soy sauce, 1/4 cup brown sugar, 1/2 tsp salt; cover & simmer 10-15 min
  • Mix 2 Tbsp cornstarch with 2 Tbsp water, add to sauté to thicken the sauce
  • Serve with steamed rice

Hi. This is easy & tasty too.

 

Leftover Pork w/ Hoisin

 

In a small bowl, stir together:
1/3 c hoisin sauce
1/4 cup O.J.
2 Ts sherry, mirin, sake or water
1 T soy sauce
 
sliced red bell pepper
grated ginger & garlic
sliced green onions
peanuts (unsalted)
**sliced leftover pork
 
In a hot skillet, fry the red bell pepper, then toss in the garlic, ginger & green onions.
Add the pork & peanuts, toss, then pour in the sauce and heat through.
If it's too thick, drizzle in a bit more O.J. to loosen it up.
 
Serve w/ rice.

Slice, batter, fry...toast hamburger buns.  Make fried pork tenderloin sandwiches, with fresh sliced maters and lettuce.

Sesame Ginger  Teriyaki  pork

 sauted  peppers, red, yellow , orange in with oil and fresh garlic  then add

 Slice the roast pork in  thin bite size pieces  on low heat , toss in StoneWall Kitchen Seasme Ginger Teriyaki sauce . Then turn off heat before it scortches

Cut the pork into bite size pieces, brown slightly with a spray of olive oil, remove,

 

Add oil stir fry fresh vegetables, a little water, cover sand steam 7 minutes, add soy and some corn starch, stir through and make a stir fry over rice!
