@KatieB get comfortable with your instant pot by watching a few beginner videos on You Tube. It helped my hesitancy immediately. That and reading the manual cover to cover. Knowledge is power. I love my IP  now

I have to agree, once you dry out boneless pork chops, they're cardboard, IMO.

 

That's why I only cook bone-in pork shops, the closer to the bone, the sweeter the meat, as my southern Grandma always said, LOL!

Unfortunately you can "mask" the pork chops but they are and still will be tough.

 

Slice thin in strips and you'll have tough strips

 

Once you dried out the meat, there's no return.  Toss and you'll never do it again.

 

It's those boneless one's that are always dry, I try to avoid those, I'll opt for a bone in center cut.

After years of cooking bone in  pork chops I graduated to boneless

 

The secret is to pull it before you think it's done, cover in loose foil & let it rest

 

Slightly under pork will no longer kill you

 

I would simmer overcooked pork in a seasoned liquid, gently, then put it in the refrigerator overnight.   Everything tastes better the next day, right?

I just hate when I over cook pork----maybe make fried rice and cut the meat into small dice---works for me
