I have 3 boneless Pork Loin Chops that I overcooked.  They are tough.  Do any of you have any ideas/recipes of what I can do with those tough chops.  TIA

 @KatieB   Slice them into thin strips and put them in a pot of jarred spaghetti sauce and simmer on the lowest stovetop heat possible.  You could add a couple of cloves of garlic and a touch of basil and some grated onion and crushed red pepper flakes and a splash of red wine.

 

The key thing is to simmer very slowly and your chops might just be salvaged.

maybe braise them in water/broth until they can be shredded....add bbq sauce....use for pulled pork sandwiches....

I would cut in strips, add sliced onions,  peppers, and beef broth in my instant pot, bring to pressure for 3-5 minutes, then make gravy and eat over rice or noodles.

Simmer them in your pasta sauce.  They will give it a lovely flavor and shred up adding some substance and dimension to your sauce.

Dice into small pieces, simmer in water with diced onion.  After about 30 minutes and the water has evaporated, stir in barbque sauce.

 

Serve on buns if you have them serve with slaw and homemade oven fries.

@RedTop   This does sound good.  Guess I'll have to learn how to use my Insta-Pot now... I've never used it - didn't want to take the time to read all the info in the instruction booklet.   But, I love rice so that would work.

@FancyPhillyshopper  I've got a dog but I don't want to start feeding him from the table.  He's 7 years old and I've never fed him from the table.  That's not good for a dog anyway.   Plus he would probably choke on those things as fast as he eats.

 

@FancyPhillyshopper   Edited to correct myself:  I do give him popcorn and potato chips when I'm eating them.  He loves Lays Honey Barbecue Chips.  He likes anything that's crunchy.
