@godiIf you don't have a lot, my Mom use to cut the dough in strips and sprinkle cinnamon sugar on them and bake the dough.  We loved it.  Good memories.

I have a recipe for Bite-Size Apple Pies using one package of refrigerated pie crust.  I will try to simplify it for using leftover pie crust.

 

Cut pie crust into strips.  Put some melted butter on each strip.  Then sprinkle with combination of cinnamon and sugar.  Slice tart apple and place one slice on each strip.  Wrap the pie crust strip around apple.  Place on baking sheet.  If desired, place more butter, cinnamon and sugar on top.  Bake at 425 for 10-15 minutes or until pastry is golden brown.
