Hi my friends. The other day we had a pot-luck. My friend made this dish and I thought it was very good. I asked for the recipe...and here is the recipe she gave me. Just wanted to share it with those who haven't had it before.Smile I remember making one similar to this but can't seem to locate that recipe.

Layered Mexican Tortillas

1 1/2 pounds ground beef

1/4 cup onion...chopped

2 cups canned DICED tomatoes..drained

1 16 ounce can re-fried beans

1 15 ounce can black beans..drained

1 10 ounce can enchilada sauce

1 envelope taco seasoning

1/4 teaspoon pepper

6 flour tortillas...10 inch size

3 cups shredded Mexican cheese...divided

2 cups crushed Fritos OR tortilla chips

Sliced ripe olives, guacamole, chopped tomatoes and sour cream, shredded lettuce... optional

In a large skillet, cook beef and onion over medium heat until meat is no longer pink. Add garlic; cook 1 minute longer. Drain. Stir in the salsa, beans, enchilada sauce, taco seasoning and pepper; heat through.
Spread 1 cup meat mixture in a greased 13-in. x 9-in. baking dish. Put 2 tortillas next to each other. On top of each one put some of the remaining meat mixture. Put some cheese on top of that. Repeat layers. Top with remaining tortillas and meat mixture.
Cover and bake at 375* for 30 minutes. Uncover; sprinkle with remaining cheese and top with tortilla chips.
Bake 10-15 minutes longer or until cheese is melted. Let stand for 10 minutes before serving. Garnish with olives, guacamole, tomatoes and sour cream and lettuce if desired.
