Snowy weather coming in for many of us, so thought I would post a recipe for Lasagna Soup. Serve with fresh garlic bread.
LASAGNA SOUP
Ingredients
1 Tbls olive oil
1 pound ground beef or Italian sausage or mix of both to equal one pound
1 small onion, finely chopped
4 cloves garlic, minced
4 cups chicken broth
1 (15 oz) can petite diced tomatoes
1 (15 oz) can crushed tomatoes
3 Tbls tomato paste
1 Tbls Italian seasoning, crush it in your hands to get the most flavor
1/2 tsp salt
1/4 tsp black pepper
8 oz lasagna noodles, broken into small pieces or Campanelle (these are noodles that already are broken and have the ruffly edges)
Garnish of minced fresh parsley or fresh basil optional
Cheese Topping
1 cup ricotta cheese
1 cup Mozzarella cheese, shredded
1/2 cup Parmesan cheese
1 tsp Italian seasoning
Instructions
In a large pot all olive oil and heat over medium high heat. Add ground beef and onions, breaking up the beef and sauteing for 5-7 minutes until the beef is cooked.
Drain any fat away.
Add chicken broth, diced tomatoes, crushed tomatoes, tomato paste, Italian seasoning and salt and pepper. Bring to a boil , cover and reduce heat to simmer for about 15 minutes.
Meanwhile bring a pot of water to a boil and cook noodles according to the package directions.
In a bowl mix together ricotta, mozzarella cheese, Parmesan cheese, and Italian seasoning. Store in fridge until ready to serve.
**Stir cooked noodles in with soup and ladle into bowls. Top with a large dollop of cheese mixture to serve...cheese will melt when mixed through.
**HOWEVER, IF YOU'RE NOT GOING TO EAT ALL THE SOUP RIGHT AWAY, DO NOT ADD THE NOODLES TO THE SOUP BUT ADD THEM TO INDIVIDUAL BOWLS. STORE ANY LEFTOVER SEPARATELY TO AVOID NOODLES FROM GETTING MUSHY OR ABSORBING THE SOUP LIQUID.

@ciao_bella Thank you for sharing this. It is going on a weekly menu soon.
Without the noodles and cheese topping, this could easily be divided into single servings and frozen.

I make a lasagna soup similar to this - recipe from skinnytaste.
It has marinara sauce in it. I use tortellini instead of lasagna noodles.
Just made this a couple nights ago.

This is a great cold-weather soup to serve with a crusty roll. I like to add a couple diced carrots with the onions, and use only crushed tomatoes.

I'd top it with seasoned croutons - don't use crackers.
