Lasagna Roll-Ups
12 lasagna noodles...cook according to instructions, then Drain. Return the noodles to the pan and cover with COLD water.
Filling:
1 (16 ounce) container cream style cottage cheese
1 (3 ounce) pkg. cream cheese...softened
2 eggs
1/4 cup parsley...chopped
1 teaspoon basil...crumbled
1/2 teaspoon salt
Combine cottage cheese and cream cheese. Beat in eggs. Add parsley, basil and salt.
Sauce:
1 pound ground beef
1 clove garlic...minced
1 (6 ounce ) can tomato PASTE
1 (16 ounce) can diced tomatoes
1 teaspoon salt
pepper to taste
1/2 teaspoon oregano
3/4 teaspoon sugar (less or more according to taste)
1 (8 ounce) pkg sliced Mozzarella cheese
Brown beef and garlic..Drain. Add tomato paste, tomatoes, salt, pepper, oregano and sugar. Cover and simmer 20 minutes. Preheat oven to 350*. Drain noodles one at a time on paper towels. Spread 1/4 cup of the filling on each noodle. Roll up each noodle then place them seam side down in a 9x13 inch pan. When all the noodles are wrapped with filling, spoon the sauce over them. Cover and bake for 40 minutes. Uncover the pan and put slices of Mozzarella chesse over the top. Bake a few more minutes til the cheese melts.
