LEMON-LIME MACAROON BARS

I was recently at a friend's house for coffee and she served this different take on the old lemon bars.  Definitely a big improvement!

 

CRUST:

2 cups sweetened flaked coconut toasted
1-1/2 cups flour
3/4 cup powdered sugar
2 T cornstarch
1/4 t kosher salt
1 cup cold butter cut in chunks

 

FILLING:
1/4 cup flour
2 cups granulated sugar
4 large eggs
2 t lime zest
2 t lemon zest
1/4 cup fresh lime juice
1/4 cup fresh lemon juice
Powdered sugar (optional)

 

Preheat oven to 350.  Pulse all crust ingredients except butter in a food processor.  Add butter and pulse until crumbly and butter is in small pieces.

 

Grease a 9 x 12 baking pan.  Press crust into bottom and slightly up the sides.  Bake until light golden, 25 minutes.  Let cool 20 minutes.

 

Whisk together flour and granulated sugar in medium bowl then whisk in eggs and citrus, zest and juice just ot blend.  Pour over crust and bake until only slightly jiggly in center, about 22 minutes.  Let cool.  Chill several hours or overnight and cut into bars. Dust with powdered sugar if you like.

WOW!  I cannot wait to fix these, maybe on Saturday.  We love lemon bars and the addition of coconut and lime, mmmmmm.  Thanks for sharing another of your great recipes.  Have many of them.  Cece
