This is an oldie but goodie from when my kids were young. Perfect cake to stick in lunch box because of no frosting.
3/4 cup oil
3/4 cup water
4 eggs
1 small pkg lemon jello
1 pkg yellow cake mix
1 t fresh lemon juice
Preheat oven to 350.
Combine all ingredients and beat for 4 minutes. Pour into 9 x 13 pan (greased and floured). Bake 35 to 40 minutes. Remove cake from oven and poke all over with fork. Pour lemon icing (below) over the top of cake while still hot. Serve hot or cold.
Lemon Icing
2 cups powdered sugar
zest of one or two lemons
enough lemon juice to pour

I have a similar recipe and we called it Lemon Pokey Cake. It is one of my favorites - so moist and lemony!

That's weird, I just cut out a recipe for a key lime poke cake which is basically the same recipe, except:
1 box yellow cake mix
1 3.4 oz pkg instant lemon pudding
1 c. water
1 c. canola oil
4 large eggs
2 tbsp key lime or regular lime juice
and then you make the same glaze with 2 tbsp fresh lime juice, 1 c. confectioners sugar and make holes in cake once it is cooked and pour glaze over it.

Thx DiAnne sounds yummy. Do you think it would turn out if I tried to cut the recipe in half? There's only 2 of us & 13 x 9 pan is just too much.

I'm not DiAnne but that sounds like a great idea! I have cut other cake recipes in half & they worked out wonderful. I do mine in my 8 x 8 (or is it 9 x 9 ?? LOL!!)

This was the Lemon Jello Cake my mother made back in the 50's.
JELLO LEMONADE CAKE
Dissolve 1 package Lemon Jello in 1 cup boiling water
Mix with:
1 package Duncan Hines White Cake Mix
1/2 cup Wesson Oil
4 eggs
Bake in greased and floured tube pan at 325 degrees about one hour
Heat one can frozen lemonade with 3/4 cup sugar. Pour hot Lemonade over hot cake and leave in pan to cool.

I guess you could use 1/2 a cake mix and 1/2 pkg of Jello. I just have never tried it and it sounds like a hassle.. You also could probably make the whole cake and freeze 1/2. I have never tried that either but it seems like the type of cake that would freeze well.

This is similar to one my Mom always made. My BFF always makes it when she goes to a pot luck. I think of it as a homage to my Mom. (A few tears)
