A good summer side dish.

1 cup orzo
1 red bell pepper, chopped
2 T butter
1 can (14 oz) chicken broth
1 lemon, zested and juiced
2 T chopped chives

In large skillet over medium-high heat cook orzo and red pepper in melted butter 3 min or until golden stirring frequently. Add chicken broth and lemon juice. Bring mixture to a boil, reduce heat, cover and simmer 12 minutes or until most of the liquid is absorbed stirring occasionally. Stir in lemon zest and chives.

Serves 4

I was just looking at a bag of orzo in the pantry yesterday and thinking about trying something new. This fits the bill and I have all the ingredients. Thanks for sharing!

Oh copy that!! I love anything w/ lemon and just rec'd a shipment of Baramundi Sea Bass from the Q!

These two will go so good together!!!!!
