Am I the only one who likes to just put a little bit of mashed potatoes in a bowl, put a few little pieces of turkey breast on top, with some gravy - nuke that and - dinner!  Smiley Happy  

 

Mashers and gravy both nuke very well to warm back up.  I always make a pretty huge batch of mashers for Thanksgiving so I can eat portions of it for a while afterward.  They store well in Lock & Lock in the refrigerator and heat up like new.

I was just talking to Tina the now Kitchenaid Lady about this very Subject. My Family loves Mashed Potatoes and I am on a search for that one recipe for these Pancakes. I love them.

Take the potatoes, cream and half and half , or just cream, a tbl. of chicken bouillion (optional), Chopped onion or chopped scallion or even dehydrated onion flakes and nuke. Potato soup. Serve cold or hot. You can skip bouillion and add salt if you like.

Oh-my goodness!  I was just wondering about this today.  I made a larger than even usual batch and was thinking about this, wondering if they would freeze well and I could freeze a few portions (vacuum sealing them, of course) for another time.  

 

I can't eat very much anymore and certainly wouldn't want any of it to go to waste.   I think I will embark on this endeavor today!  Thanks!!  Smiley Happy

I did the same thing once, DD went to a friends, I didn't want them to spoil so I froze them in zip-lock baggies - serving size.

 

They came out great IMO.

 

Let me know what you think after you try it.

Thanks!  I have already put several servings in Lock & Locks in the freezer.  After they're frozen I will pop them out and vacuum seal each one.  YAY!  Smiley Happy

 

I can't imagine they wouldn't be good, especially with vac sealing them.   I'm crazy about food storage so anything I can store well for later is all the better.  This is how I do stuff like stews, chilis, soups.    

 

I have one little Le Creuset pot (1qt I believe) that is the exact size of the portions (two for me or one for the husband) that I freeze, using L&L, and then vacuum seal.  I can just pop it out of the bag and into that LC pot to heat up.

My aunt used to use leftover mashed potatoes to make two versions of warm mashed potato salad: In one version, she sautéed onion and celery briefly, stirred in the mashed ppotatoes til warm and added mayonnaise, mustard, celery seed and my be a pinch of sugar. The second version was traditional German potato salad favors with crumbled bacon, sugar, and vinegar mixed together over heat for sugar to melt and then mixed into the mashed potatoes and stirred til warm. I only make mashed potsatoes once a year on Thanksgiving, so I never have leftover mashed potatoes to try!
