Fried Rice by LilBitMissty

· 3 cups rice - NOT minute rice

· 2 eggs

· 1/4 teaspoon salt

· 1 Tablespoon oil

· 8 slices bacon...cut up

· 4 green onions...chopped

· 3/4 cup water chestnuts...diced

· 1/2 cup frozen peas

· dash of sugar

· pinch of garlic powder

· soy sauce to taste

Cook rice. Drain and rinse. Set aside to cool.

In a small bowl, beat eggs with salt. In a skillet, heat oil. Add eggs and cook. Stir frequently until set. Cut into small pieces and set aside.

In a 10 inch skillet, cook bacon until brown and crisp. Drain on paper towels. Crumble. Discard all but 2 tablespoons bacon drippings.

Add green onions, water chestnuts, frozen peas, sugar and garlic powder. Stir frequently for one minute until well coated.

Separate grains of cooked rice with a fork and then add green onion mixture and stir fry until heated through. Add cooked egg, crisp bacon and soy sauce. Mix well and heat through.

Stuffed Pasta Shells by LilBitMissty

3/4 pound ground beef

1 box jumbo pasta shells

4 cups (32 ounces) ricotta cheese

8 ounces mozzarella shells

1/2 cup Parmesan cheese...grated ...plus more for the top

2 eggs

1 tablespoon parsley...chopped

1//2 teaspoon salt

pepper to taste

1/8 teaspoon nutmeg

1 jar spaghetti sauce (48 oz)

Cook shells as directed on box. Drain and rinse shells with cold water.

Brown beef; drain and set aside.

Mix together cheeses, eggs, salt, pepper and nutmeg.

Fill the shells with the cheese mixture.

Mix the beef with spaghetti sauce.

Cover the bottom of a baking pan with SOME of the sauce.

Arrange stuffed shells in a single layer in the pan. Pour remaining sauce over shells.

Bake at 350* for 30 minutes or until hot. Sprinkle with Parmesan cheese over top.

This recipe can be done in a crockpot cooked on med for 4 hours. Use enough sauce to put on the bottom, cover each layer and the top, I don't like a lot of sauce, so if you're using jarred I'd say a regular sized jar should do it.

Crock Pot Roast by LilBitMissty

2 pounds beef chuck roast

1 Tablespoon oil

2 cloves garlic ...minced

1/2 onion ...sliced

1 (14.5 oz) can Italian-style stewed tomatoes

1 (6 oz can) Italian-style tomato paste

1 Tablespoon brown sugar

1/2 teaspoon salt

1/2 teaspoon black pepper

1 bay leaf

1 Tablespoon quick-cooking tapioca

2 medium carrots ...chopped

2 stalks celery ...sliced

1 (8 oz) pkg noodles...cooked

· In a large skillet brown roast on all sides in hot oil with onions and garlic.

· Transfer to any size crockpot.

· In a small bowl combine tomatoes, tomato paste, brown sugar, salt, pepper, and bay leaf; pour over meat.

· Cover and cook on LOW for 10 to 12 hours OR on HIGH for 5 to 6 hours.

· Put the tapioca, celery and carrots in about the last 2 1/2 hours cook time. Discard bay leaf.

· Cut meat up and serve over hot cooked noodles.

Streusel Coffee Cake by LilBitMissty - her Mom's recipe

1/4 cup butter (no substitute!)

3/4 cup sugar

1 egg

1/2 cup milk

1 1/2 cups flour...sifted

2 teaspoons baking powder

1/2 teaspoon salt


Streusel:

1/2 cup brown sugar

2 Tablespoons flour

2 teaspoons cinnamon

2 Tablespoons melted butter

1/2 cup chopped pecans

· Grease a 8x8 pan. Cream butter & sugar; beat in egg. Alternately stir in dry ingredients & milk.

· Into the greased pan, pour 1/2 the batter. Top with 1/2 streusel. Repeat.

· Bake at 375* for 30 minutes

Ramen Chicken Salad by LilBitMissty her Mom's recipe

2 -3 cups chicken breasts ...cooked and chopped

1 head cabbage... shredded or chopped

2 green onions...finely chopped

2 (2 1/2 ounce) packages slivered almonds

3 tablespoons sunflower seeds

2 packages Ramen noodles

3 tablespoons butter

Dressing

3/4 cup vegetable oil or 3/4 cup canola oil
4 1/2 tablespoons seasoned rice vinegar
4 1/2 tablespoons sugar
2 teaspoons salt
1 teaspoon pepper

Prepare dressing and set aside. Smash ramen noodles (discard seasoning packets) and brown over medium heat in 3 Tbsp butter.

Once noodles have begun to slightly brown, add slivered almonds. If you start to brown the Ramen and almonds at the same time, the almonds will burn before the Ramen browns.

Once the ramen noodles have turned a dark golden brown, remove from heat and set aside.

Combine cabbage, green onions, chicken and sunflower seeds in a large bowl.

Add the ramen/almond mixture and stir well. Drizzle on the dressing and toss well to coat.

Polish Sausage Casserole by LilBitMissty

1 pound polish sausage (kielbasa) - whole or cut in 4 pcs

1 (28 ounce) can diced tomatoes..NOT drained

1/2 large onion, diced

1 large green pepper, diced

1 cup long grain rice, UNCOOKED (NOT instant rice)

Preheat oven to 350*.

In a large bowl. combine all ingredients.

Bake COVERED for 1 hour.

Remove from oven; stir and bake another 50-60 minutes, loosely covered.

Quick Cabbage Roll Casserole
4 cups shredded cabbage
1 pound ground beef
3/4 onion..chopped
1 26 ounce jar tomato and basil spaghetti sauce
1 cup quick cooking rice
1/2 cup water
1 cup grated cheddar cheese

Put cabbage in a 9x13 inch pan.

Brown beef and onion. When beef is cooked all the way pour the spaghetti sauce over it.

Add rice and water. Stir until blended. Pour over cabbage.

Bake at 350* for 35-40 minutes. Top with cheese and serve.

Trade-Winds Salad by LilBitMissty

1 (12 ounce) pkg. pasta shells

2 tablespoons butter

1 cup ham, diced

1/4 cup brown sugar

1 cup cheddar cheese, cubed

1/2 cup seedless grapes

1 cup (8 ounce can) pineapple chunks; RESERVE JUICE!

2 Tablespoons pineapple juice

1/4 cup mayonnaise

1/4 cup sour cream

Cook pasta shells according to directions. Drain. Rinse with cold water.

In medium saucepan, melt butter with brown sugar. Let cool; Add ham, cheese and grapes.

Drain pineapple, reserving 2 Tablespoons juice. Add pineapple chunks to the pasta mixture.

For the dressing:

Combine mayo, sour cream, and reserved pineapple juice. Blend well. Pour dressing over pasta mixture and lightly toss. Refrigerate. This makes about 8 servings.

Hi friends. I am so sorry about the typo. Please use this corrected recipe. It SHOULD have read 2 2 ounce pkgs. Dehydrated chicken noodle soup.

Savory Sausage Casserole

2 pounds ground pork sausage

1 cup rice...uncooked

2 2 ounce packages dehydrated chicken noodle soup

1/4 cup onion...minced

1 cup celery...sliced

2 1/2 cups water

1 tablespoon soy sauce

1/2 cup toasted slivered OR halved almonds

Break apart sausage and brown. Drain. Mix browned sausage, rice, soup, onion and celery. Mix soy sauce with water and then add to sausage mixture. Mix well. Put in a 2 quart casserole dish. Sprinkle almonds on top. Cover and bake at 350* for 1 hour and 15 minutes.

Almond Roca by LilBitMissty

1 cup sugar

1 cup (2 sticks) butter

1/4 cup water

1 tablespoon WHITE karo syrup

8 ounces slivered almonds

8 ounces MILK CHOCOLATE chips

Lightly grease a jelly roll pan. In a heavy pan, put in the sugar, butter, water corn syrup and almonds.

Cook over medium stirring until a candy thermometer reaches 290*. Watch it close so it doesn't burn. The color will be a rich amber color and form a hard ball when dropped by spoonful into cold water. . Depending on your altitude it may have to reach 310* to make the hard ball stage.

The almonds will be toasted at this point. While warm, pour the candy into jelly roll pan. Sprinkle the chocolate chips over the top. Use a butter to spread making an even coating on the top. Cool. Break into bite size pieces and store in an air-tight container.

Bailey Balls by LilBitMissty

1 (12 oz box) vanilla wafer cookies ... finely crushed

1 cup pecans ... finely chopped

1/2 cup Bailey's Irish Cream

3 tablespoons light corn syrup (I use Karo White Syrup)

1 1/2 teaspoons unsweetened cocoa

3/4 cup powdered sugar

Combine all ingredients except powdered sugar in a bowl and mix until well blended.

Allow to stand 5 minutes. Shape mixture into 1-inch balls.

Roll balls in powdered sugar. Allow to dry on wire rack for 1 hour.

Roll in powdered sugar again.

Store in airtight container between layers of wax paper.

These are better if they sit for a day and re-rolled in powdered sugar before serving.

****Sometimes I will add just a bit (not much) more cocoa for a more chocolaty taste..But, make it to your taste***

Make Ahead Bacon And Egg Casserole
4 cups White bread....(I use 9-grain) cubed
4 oz Cheddar cheese.... shredded
4 oz Swiss cheese.... shredded
1/4 cup Green onion.... chopped
1/4 cup Green pepper.... diced
1/2 cup Tomatoes.... seeded & diced
10 Eggs, beaten
4 cups Milk
1 tablespoon Parsley.... chopped
1 teaspoon Dry mustard
1 teaspoon Salt
1/4 teaspoon Pepper
1 lb Bacon.... fried & crumbled

Generously grease 13 x 9-inch pan. Arrange bread cubes in bottom of dish. Layer cheese, green onions, green pepper, mushrooms and tomatoes on top of bread. In large bowl, combine eggs, milk, and seasonings; mix well. Pour egg mixture over bread; sprinkle bacon evenly over top. Cover, and refrigerate overnight. Heat oven to 325 F. Bake uncovered 50 to 60 minutes or until center is set. Stand 10 minutes before serving. Makes 12 servings.

Breakfast Casserole
1 pound sliced bacon...cooked crisp and crumbled
1/2 medium sweet onion, chopped
6 eggs...lightly beaten
4 cups frozen shredded hash brown potatoes...thawed
2 cups shredded Cheddar cheese
1 1/2 cups small curd cottage cheese
1 1/4 cups shredded Swiss Cheese

In a large skillet, cook bacon until bacon is crisp, then drain bacon on paper towel. Crumble bacon and set aside. Cook onion in bacon drippings until tender, drain. In a bowl, combine the remaining ingredients. Stir in bacon and onions. Transfer to a greased 13-in. x 9-in. x 2-in. baking dish.
Bake, uncovered, at 350 * for 35-40 minutes or until set and bubbly. Let stand for 10 minutes before cutting

Breakfast Casserole from Trader Joe's website:

  • 1 loaf TJ's Crusty French Bread, torn into pieces
  • 6 TJ's Eggs
  • 1/4 cup TJ's Milk
  • 1 cup TJ's Spicy Italian Chicken Sausage (pre-cooked), sliced (or TJ's Veg. Sausage-less Sausage)
  • 1 cup TJ's Monterey Jack Cheese, grated
  • TJ's Spices (optional)

Preheat oven to 350° and grease baking pan with your choice of oil or butter. Place bread pieces in pan and distribute evenly. Beat the eggs, milk and any spices you desire (salt, pepper, garlic powder...) and pour over the bread. Add the remaining ingredients and bake for 25 minutes or until top is golden brown and a knife put in the center comes out clean. Let sit for 5 minutes before serving (oh, you can wait). Enjoy.

Serves: 10
Cooking Time: 30 Minutes

1 stick butter or margarine
1 can cream of mushroom soup
1 can cream of chicken soup

1 pint sour cream
2 cups chopped cooked chicken or turkey
1 small can mushrooms..drained
1/4 pound spaghetti
parmesan cheese

Melt butter in a pot over low heat.
Add soups and mushrooms. When completely mixed, remove from heat. Add sour cream and chicken or turkey. Place back on the stove under low heat just to keep it warm. Stir often. Cook spaghetti till tender and then drain. Add spaghetti to the mixture. Mix well. Grease a casserole dish add mixture and then top it with parmesan cheese. Bake at 350* for 45 minutes.

I just love salads..anytime of the year! :)

CHICKEN SALAD
2 cooked chicken breasts
1 medium apple
3 stalks celery
1 ½ cups green or red seedless grapes
ÂĽ cup mayonnaise
2 T milk
1 T sugar or sugar substitute

Cook the chicken breasts and let cool.-
Chop the celery into thin slices.
Cut the apple into quarters, then slice into small pieces. Cube the chicken breasts.
Mix chopped ingredients and whole grapes in a large bowl, toss gently.
Wisk the mayo with milk and sugar or sugar substitute in a small bowl. Add more milk if needed. The dressing should be easy to mix with the salad, but not runny. Chill, serve and enjoy!

In a baking dish layer the following:

1 pound ground beef mixed with 1/2 teaspoon salt, 1/8 teaspoon pepper, 1.8 teaspoon garlic powder
thin sliced potatoes
thin sliced onion
1 can kidney beans
1 stalk celery
1 can tomato soup mixed with 1 can water

Mix spices with ground beef..cover bottom of baking dish.

Layer of potatoes

Layer of onions

Top with tomato soup mixed with water.

Bake at 350* for 1 1/2 hours

Pumpkin Cookies
Cookies: (Makes 5 dozen)
4 cups all purpose flour
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
2 teaspoons ground cinnamon
1 teaspoon allspice
2 cups vegetable shortening
2 cups granulated sugar
1 (15-ounce) can Pure Pumpkin
2 large eggs
4 teaspoons vanilla extract - divided in half (remaining is used in the frosting)
2 cups raisins
1 cup nuts, chopped

Frosting:
2/3 cup butter, softened
3 –4 teaspoons rum extract
4 cups powdered sugar
1/2 cup Evaporated Milk

1.Preheat oven to 350°F (175°C).

2. Combine flour, baking powder, baking soda, salt, cinnamon and allspice in medium bowl. Beat shortening and granulated sugar in large mixer bowl for 30 seconds. Add pumpkin, eggs and 2 teaspoons vanilla extract; beat until blended. Gradually add flour mixture into pumpkin mixture at low speed until combined. Stir in raisins and nuts. Drop by rounded teaspoons onto ungreased baking sheets.

3. Bake for 12 to 15 minutes or until edges are golden brown. Cool on baking sheets for 2 minutes; remove to wire rack to cool completely. Spread each cookie with frosting.

4. For Frosting: Beat butter, rum extract and remaining vanilla extract in medium mixer bowl until creamy. Gradually beat in powdered sugar and evaporated milk until smooth (frosting will be thin). Drizzle over cookies.

3 lb chicken wings
1/2 c butter or margarine
1 c soy sauce
1 c brown sugar
3/4 c water
1/2 teaspoon dry mustard

Arrange wings in shallow baking pan. Heat butter, soy sauce, sugar, water and mustard until butter and sugar melt. Cool; pour over wings and marinate at least 2 hours, turning once or twice. Bake in same pan at 375~ for 1-1/4 to 1-1/2 hours, turning occasionally. Drain on paper towels.

CRESCENT ROLL CASSEROLE lilbitmissty

1 1/2 lbs. hamburger
1/4 c. minced onion
8 oz. tomato sauce
1 pkg. spaghetti sauce mix
8 oz. sour cream
2 c. Mozzarella cheese
1 can crescent rolls (8 slices)
2 tbsp. melted butter
1/3 c. Parmesan cheese
3 c. cooked pasta

Layer cooked pasta (your choice) in bottom of 9 x 13 inch pan.

Brown and drain hamburger. Add onion and spread over pasta. Spread
tomato sauce on meat layer and sprinkle with spaghetti mix. Spread
sour cream over all and top with Mozzarella cheese. Unroll crescent
roll dough on top. Dribble with butter and sprinkle with Parmesan
cheese.

Bake 25 minutes at 350 degrees.
