It is unusually hot here and I was looking for something cool to eat.  Found this on the internet. 

 

1 pound ground beef
1 packet taco seasoning mix
3-4 cups cornbread cubes

2 cups shredded sharp cheddar cheese

1 head iceberg lettuce, chopped

1/2 cup ranch dressing

1/2 pint cherry tomatoes in halves or quarters

chopped scallions for garnish

sour cream for garnish

 

Cook ground beef with taco spices.

 

In a large glass bowl layer cornbread, ground beef, cheese, lettuce, drizzle ranch dressing. Repeat layer.  For the top layer use remaining cornbread, cheese and the tomatoes.  Top with a dollop sour cream.  Scatter chopped scallions.  Let sit for 1/2 hour. 

 

I used a trifle bowl for this. 

 

I don't use the purchased taco mix but mix the following to season tacos.

 

2 T ground cumin

1 T smoked paprika

2 t garlic powder

1 t freshly ground black pepper

1 t oregano

1 t kosher salt

 

To season 1 pound of ground beef I would use 2-3 T according to taste

i might add a little salsa, a layer of refried beans  and chunks of avocado or guacamole - ole!

Yes,the taco seasoning recipe is appreciated. The packs have a lot of salt and I like to use my spices up instead of wasting them.    This sounds very summer easy and good.  I hear ya,ms traditional, I would serve those on the side at my house.....kids here don't yet appreciate a good refried bean ..lol.

I serve avocado on the side because of the "brown" factor.  A layer of refried beans sounds good.  I will have to give that a try!
