Next time I might use less olive oil.

@Toots711    I, too, thought the oil amount was a little too much after making it and will be cutting it down to 3/4 of a cup.  I think the amount given in the original recipe is because they want to make sure you have enough marinade to cover all the ingredients, and some ingredients like the size of the chicken thighs could make a difference in the amount of oil mixture to cover them.  It's an easy adjustment to make, and I'll be doing it as well.
