This pumpkin bread recipe has to be the best I have ever had.  I hope others out there give it a try.  Thanks Jane.

I have a pumpkin bread recipe I adore, but I love pumpkin bread, thinking of having my middle name become pumpkin. LOL

Yum!!! Now I'm hungry for pumpkin bread. I use the recipe in from the Betty Crocker cookbook. It's really yummy. I don't put raisins it it. The recipe calls for shortening so I replaced that with canola oil since it was suppose to be healthier. Since it's not healthier I use KerryGold butter.

 

1 c butter
2 2/3 c sugar
4 eggs
1 can pumpkin (1 lb)
2/3 c water
3 1/3 c all purpose flour
2 tsp soda
1 1/2 tsp salt
1/2 tsp baking powder
1 tsp cinnamon
1 tsp cloves
1 c chopped walnuts
 
Heat Oven to 350° Bake 70 mins or until toothpick comes out clean
Grease 2 -  9 x 5 x 3 loaf pans
In large bowl mix oil & sugar, stir in eggs, pumpkin & water
Blend in flour, soda, salt, baking powder, cinnamon & cloves
Stir in nuts
 
 
I also make these in the smaller 5 x 3 1/2 x 2 tin pans.

omg i love this time of year. usually cant wait for dunkin donuts to start having there pumkin muffins. today i made a apple chocolate chip bunt cake. next weedend im making pumkin bread. i allready ask my wife to put ingredients on shopping list so when i shop i will have everything.

I couldn't find Jane's recipe but found Jill's that I am going to try.

her recipe was in the blogs and forum section about a week or so ago.  It had a picture of her and her daughter and a story about picking pumpkins.

My Favorite Pumpkin Bread

Serves 8

 

Ingredients:

1 cup plain pumpkin

2 eggs

1/2 cup oil

1/2 cup water

1-3/4 cups flour

1-1/2 cups sugar

1 tsp baking soda

3/4 tsp salt

1/4 tsp baking powder

1/2 tsp cloves

1/2 tsp nutmeg

1 tsp cinnamon

1 cup raisins

1 cup walnuts

Preparation:

Preheat oven to 350°F.

 

Mix pumpkin, eggs, oil, and water. Mix all dry ingredients together and add to pumpkin mixture. Mix until just blended (I mix it by hand for this recipe). Add in raisins and nuts.

 

Pour into 9" x 5" loaf pan and bake 55–60 minutes or until toothpick comes out clean from center.

@ChiliPepper My oven takes about 50 mins in the smaller pans. When a toothpick comes out clean they are done. Some pans are 5 x 3 & some are 6 x 3. I think I used 6 pans.

I do the same when I make zuchinni bread.

I make a lot of these smaller ones during the holidays to give out to neighbors plus DH takes them to work.

Thanks for the info.

 

I also like to make mine in smaller pans. We wouldn't eat a whole, large loaf & I would rather take the rest to friends at work or freeze it.
