Jane T's Pumpkin Bread recipe

I made Pumpkin Bread today using Jane Treacy's recipe....(I used the search function here to find a recipe and used hers). It's delicious - very moist and pumpkiny, and enough batter for an 8" x 4" loaf pan as well as a mini pan. DH and I have already finished off the small loaf!

I'd like to make that recipe except I can't find pumpkin here. Went to five stores and no one has it.

You can order the canned pumpkin from Amazon comes in a pack of 4 or 6 cans. They also have the organic canned pumpkin.

Re: Jane T's Pumpkin Bread recipe

@piperbay, I found the 15 oz cans of pumpkin last week at my local grocer....I think it was couple of dollars. I haven't seen the large cans though.

I read an article on AllRecipes that said they planted later this season than normal due to the rain. Said pumpkin should be in store in a couple of weeks. Sould be getting to stores by now.

It's online at Wal-Mart for $2.08 for 15 oz can.

I saw Libby's canned Pumpkin in my grocery store. It was over $3.00 a can which I thought was expensive.

I made this pumpkin bread today and wish I had done what you did by putting a little batter in a mini pan as well as the larger loaf pan. I put it all in one loaf pan and it didn't get done in the middle. I was able to cut the ends off and salvage most of it. It is very tasty! Next time I will know not to put It all in one pan! 😄😄😄😄

I have not made pumpkin bread in a few years and never as it been Jane's recipe.  But for some reason every time I do the pumpkin bread I would always have to use an extra mini pan.  Banana bread seems to be fine all in one pan but the pumpkin itself must be the reason.
