Lipton Rice Pilaf

 

INGREDIENTS

1/4 cup butter

3/4 cup onion, chopped

1 cup celery, chopped

1 cup rice, uncooked

1 envelope Lipton Golden Onion or Chicken Noodle Soup mix

2 1/2 cup water

1 teaspoon salt

1/4 teaspoon pepper 

1/4 teaspoon sage

1/4 teaspoon thyme

INSTRUCTIONS:  

In a skillet, heat butter & saute rice, onion, and celery until rice is golden brown. Stir in remaining ingredients. Cover and simmer until water is absorbed. Remove from heat, let stand for 10 minutes, stir and enjoy!

How about something Green that starts with an M!

 

Southern Mustard Greens

  • 2 pounds mustard greens (about 2 bunches)
  • 2 1/2 cups water, divided
  • 4 strips thickly sliced bacon, diced
  • 1 medium onion, chopped
  • Salt, and pepper to taste
  • Optional: 1 teaspoon sugar
  • Optional: Dash of crushed red pepper flakes

 

Thoroughly wash the mustard greens in 2 to 3 changes of water, or until you can't feel any grit in the bottom of the bowl. Trim off and discard the thick stems and coarsely chop the leaves.

 

Bring 1 cup of the water to boil in a large pot. Add the washed greens in handfuls, waiting to add the next bunch until the leaves in the pot begin to wilt.

 

Cover and reduce the heat to low. Simmer 15 to 20 minutes. Drain the greens in a colander, squeezing water out and set aside.

Wipe out the pot and add the bacon. Fry until crisp. Removethe bacon to a plate lined with paper towels to drain.  Add the onion to the bacon drippings and  sauté until the onion is soft.

Return the bacon to the pot and stir to combine. 

Add the cooked greens to the pot and stir in the remaining 1 1/2 cups of water.

Add salt and pepper to taste, along with the sugar and crushed red pepper flakes, if desired. Stir to combine.

Cover the pot and simmer the greens over low heat until tender, 30 to 40 minutes.

 

Ham,fat back, smoked turkey or turkey bacon works!

 

P.S.  You can't cook greens too long!

NACHO Cheese Dip

 

2 lbs. ground beef, browned and drained

2 lbs. Velveeta cheese, melted

1 can cream of mushroom soup

1 (8oz) jar picante sauce

 

Combine all ingredients and serve warm with tortilla chips.  Crock pot works well with this recipe.

Slow Cooker Pork with Peppers and Olives

 

  • 2 yellow onions, sliced (about 4 cups)

  • 1 Tablespoon olive oil

  • 6 cloves garlic, smashed

  • 1 3.5-pound boneless pork shoulder, cut into 3 pieces

  • 1 28-ounce can crushed tomatoes

  • 2 orange bell peppers, sliced (about 3 cups)

  • 1 Tablespoon dried oregano

  • 2 teaspoons ground cumin

  • 1 cup pimiento-stuffed green olives, roughly chopped

  • 2 ½ teaspoons kosher salt

  • 2 teaspoons red wine vinegar

  • 1 teaspoon freshly ground black pepper

  • 2 15-ounce cans no-salt-added black beans, drained and rinsed

  • 4 cups cooked white rice

 
  1. In a large, microwave-safe bowl, toss onions with oil and garlic until coated.

     
  2. Cover the bowl tightly with plastic wrap and then microwave on high until onions are just tender, about 4 minutes.

     
  3. In a 6-quart slow cooker, add pork, cooked onion mixture, tomatoes, bell peppers, oregano, and cumin. Cook on low until pork is very tender, 7 to 8 hours.

     
  4. Skim and discard excess fat from pork and then, using 2 forks, shred the pork inside the slow cooker. Stir in olives, salt, vinegar, and pepper.

     
  5. In a medium microwave-safe bowl, add beans and 1 cup cooking liquid from slow cooker.

     
  6. Cover the bowl tightly with plastic wrap and then microwave on high until beans are heated through, about 90 seconds.

     
  7. Serve beans and pork mixture with rice.

I have to post this since I just made it....posting as I found in a TOH Freezer Pleaser Cookbook... notes follow.  Good recipe!

 

PARMESAN Knots

 

1/2 cup canola oil

1/4 cup PARMESAN cheese

1 1/2 teaspoons dried parsley flakes

1 1/2 teaspoons dried oregano

dash of pepper

3 tubes (10-12 oz each-5 count) refrigerated buttermilk 

              biscuits

 

Combine oil, cheese, parsley, oregano, garlic powder and pepper; set aside.  Cut each biscuit in half.  Roll each portion into a 6" rope; tie in a loose knot.  Place on greased baking sheets.

Bake at 400 for 8-11 minutes or until golden brown; remove from oven and brush with the PARMESAN  mixture.  Serve warm or cool and freeze.

 

***  I made as recipe said...very good, but, bottoms burned first before tops turned golden.  Buttermilk biscuit can says bake at 375 on ungreased pan.  Next time I think I will bake at 375 and maybe ungreased is better.  Don't know until I try.  Tweak on your own.  Easy to make...good.

QUAKER Oatmeal Cookies
14 tablespoons butter softened
3/4 cup brown sugar firmly packed
1/2 cup granulated sugar
2 eggs
1 teaspoon vanilla
1 1/2 cups all purpose flour
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoons salt optional
3 cups QUAKER Oats quick or old-fashioned, uncooked
1 cup raisins
Instructions
Heat oven to 350 F. In large bowl, beat butter and sugars on medium speed of electric mixer until creamy.
Add eggs and vanilla; beat well.
Add combined flour, baking soda, cinnamon, and salt; mix well.
Add oats and raisins; mix well.
Drop dough by rounded tablespoonfuls onto ungreased cookie sheets.
Bake 8 to 10 minutes or until light golden brown. Cool 1 minute on cookie sheets; remove to wire rack. Cool completely. Store tightly covered. Makes about 4 dozen cookies.

I've used this trick for years. I buy a French baguette every week. At home, I cut it into thirds and freeze it. When I am ready to warm a section, I thaw it and dip it into hot water. Stick the Bread Under Water

Put the Bread In the Oven

If your oven has a “warm” setting and you’ve been waiting to use it, this is your moment. If not, just set it to 300-325 degrees and pop the bread in the oven, directly on the rack. Set a timer for 6-7 minutes, depending on the size of the loaf—or 10-12 for a super wet loaf (like one whose interior has gotten drenched). What emerges will be a good-as-new loaf: Moist on the inside, crackly-crust on the outside.

 

Be Happy! You Now Have a Fresh Loaf of Bread

What is this trickery? How does this all work? The water turns to steam, which rehydrates the bread’s crumb, or interior, while the heat of the oven firms up the crust. As a bonus, your kitchen smells great. Now grab that jam—we’ve got a loaf of bread to eat.

I add a sprinkling of chili lime seasoning (Tajin) and eat withh tortilla chips or Frito scoops.
 
Shrimp Salsa

INGREDIENTS
1/2 lb salad shrimp
2 Roma tomatoes, diced
1/2 red onion, diced 
1/4 cup minced cilantro
1/4 cup fresh lime juice  
1 tsp salt
1 tsp freshly ground black pepper
1 clove garlic, minced
 
DIRECTIONS
Stir all ingredients together, cover w/ plastic wrap & refrigerate until flavors meld, at least 1 hr. Serve cold.
