GREEN TOMATO RELISH

 

1 qt     green tomatoes
1 lg     sweet pepper, red
1 lg     sweet pepper, green
1 lg     onion

1/4 t    salt

½ C    vinegar
¾ C    sugar (or to taste)
1-3 hot peppers (optional)

Chop vegetables, squeeze off juice. Put into large sauce pan. . Add salt.

Pour vinegar and sugar in pan. 
Let come to a boil and boil for 20 minutes.

Put into jars while hot and seal.

Makes 3 pints.

ICE CREAM Layer Cake

 

1 Pound Cake

1 cup vanilla ICE CREAM, slightly softened 

4 large peanut butter candies, roughly chopped

1 cup chocolate ICE CREAM, slightly softened

1/2 cup chocolate candies, such as M&M's, chopped

1 cup chocolate chip ICE CREAM, slightly softened 

Chocolate shell ICE CREAM sauce (type that hardens), such as Smucker's Magic Shell, for covering the top.

 

Line a loaf pan with plastic wrap...enough to drape over sides. Slice the pound cake horizontally into 3 pieces.  Place first slice in loaf pan.  Cover this slice with the vanilla ICE CREAM, followed by three-quarters of the chopped peanut butter cups.  Add a second layer of cake and cover with the chocolate ICE CREAM, followed by three-quarters of the chocolate candies (M&M's).  Place the last layer of cake on top, followed by the chocolate-chip ICE CREAM.  Cover with the chocolate shell sauce, then the remaining peanut butter cups and M&M's.  Let sauce set for few seconds, then fold over the plastic wrap and place in the freezer until frozen, about 4 hours.

 

When ready to serve, pull back the plastic wrap, gently lift the cake out and peel off the wrapping completely.  Slice, serve and enjoy!

 

(This is a recipe from Ree Drummond/Pioneer Woman.  I think you can choose different types of ICE CREAM, if desired.)

I have no idea where this recipe came from someone shared it with me without including a name


Jalapeño Popper Dip

6 slices bacon cooked chopped
2 - 8 oz cream cheese room temperature
1/2 cup mayonnaise
1/2 cup sour cream
3/4 cup grated sharp cheddar cheese
1/2 cup grated Parmesan cheese
3 medium JALAPEÑO peppers seeded and finely diced
1 tsp garlic powder
4 green onions sliced


Preheat oven to 350°F
Reserve in small bowl one slice of cooked chopped bacon
2 tablespoon diced Jalapeño’s
1 green onion diced for topping


In a large bowl mix the bacon, cream cheese, mayonnaise, sour cream, cheddar cheese , seeded and diced Jalapeño peppers, Parmesan, garlic powder, 3 green onions, until fully combined and then add the mixture to a greased baking dish

Bake for 20-25 min or until the top is bubbly and golden brown

Immediately sprinkle with reserved bacon , jalapeño and onion

Fried Cabbage with Kielbasa

Ingredients

  • 1 tablespoon olive oil
  • 1 large onion chopped
  • 1 pound kielbasa cut into bite sized pieces
  • 1 medium head cabbage chopped
  • 2 tablespoons butter
  • 1 pinch salt and pepper

Instructions

Add olive oil to large frying pan over med high heat.

Add onion and kielbasa, cooking until onion is soft and kielbasa is slightly browned on both sides - about 10 minutes.

Add cabbage and butter and stir.

Cover and cook over medium heat for 25-30 minutes, or until cabbage is wilted and tender.


Add salt and pepper to taste.

Serve over mashed potatoes or egg noodles.

This is one of LilBitMissty's recipes (sure do miss her postings!!) that I've made several times.  My suggestion-- DON'T pass on the sour cream sauce!

 

Apple Lasagna

 

Filling:

1 lightly beaten egg
2 cups shredded cheddar cheese
1 cup part-skim ricotta cheese
1/4 cup sugar
1 tsp almond extract
2- 21oz. cans apple pie filling (or make your own)
6 lasagna noodles - cooked, rinsed and drained

******Mix egg →→ extract. Set aside
Spread 1 can apple pie filling into a 13 X 9 baking dish, coated well w/ nonstick spray. Top w/ 3 cooked lasagna noodles, then cheese mixture. Layer with 3 more lasagna noodles, and 2nd can apple pie filling.

 

Topping:
1/3 cup flour
1/4 cup quick cooking oats
dash of nutmeg
1/3 cup brown sugar
1/2 tsp. cinnamon
3 TBS. butter

******Cut butter into dry ingredients until crumbly. Sprinkle over filling. Bake at 350°, uncovered, 45 - 50 mins, or until bubbly & heated through. Let stand at least 15 mins.

 

Sour Cream Sauce (optional):
Mix 3/4 cup sour cream w/ 3 TBS brown sugar

******Serve a dollop atop each serving of apple lasagna.

Mocha Brownie Trifle

 

Mocha Cream:

  • 4 oz cream cheese softened
  • 3 tablespoon powdered sugar
  • 3 tablespoon International Delight® Iced Mocha
  • 1 cup cool whip/whipped cream

Brownies:

  • 12 pieces brownies homemade or store bought
  •  cup International Delight® Iced Mocha

INSTRUCTIONS

  • Whisk cream cheese and powdered sugar until combined. Add in Iced Mocha and mix well.
  • Fold in cool whip gently until combined.
  • Soak the brownie pieces in iced Mocha and place 2-3 pieces at the bottom of each glass.
  • Top with some of the mocha cream.
  • Repeat until all brownie pieces and cream is used.
  • Chill in the fridge for at least an hour before serving.

Sheet Tray Irish Nachos

This is 'nach-o average' appetizer.  A great dish for St. Paddy's Day.

 

Servings: 4.   Prep:10 min.   Cook: 40 min

 

Ingredients
4 russet potatoes, sliced ¼” thick & soaked in water
2 TBS olive oil
1 tsp salt
1½ cups shredded cheddar cheese

1 pkg corned beef, cooked per pkg directions
1 cup sauerkraut
¼ cup sliced green onions

¼ cup sour cream

 

Directions
1. Heat oven to 425°F. Pat dry potato slices then arrange on a sheet tray in an even layer.

2. Drizzle with oil & season with salt.

3. Roast 30 min or until potatoes are slightly crisp and browning on the edges.

4. Sprinkle w/ cheese, corned beef & sauerkraut. Bake an addt'l 10 min or until cheese has melted.

5. Top with green onions & sour cream.

OATMEAL Chocolate-Chip Cookies*

 

1 cup butter, softened 

3/4 cup brown sugar

3/4 cup regular sugar

1 1/2 teaspoons vanilla

2 eggs

2 cups flour

2 cups OATMEAL

1 teaspoon baking soda

1 teaspoon salt

1 pkg. (12oz) chocolate-chips

 

Mix together butter, sugars and vanilla until blended.  Add eggs; mix.  Add flour, OATMEAL, baking soda and salt; mix together.  Then add chocolate-chips and combine.  Using cookie scoop or tablespoon drop on cookie sheet.  Bake at 350 for 10-12 minutes.

 

* Adding OATMEAL makes these a "healthy" cookie to me!

NO BAKE!

 

This peanut butter pie turns out delicious every time because it is so simple, it’s impossible to mess up. All I have to do is mix, pour, and chill!

 

Ingredients:

½ cup milk
1 cup powdered sugar

⅔ cup peanut butter

4 ounces cream cheese

1 graham cracker pie crust or oreo pie crust

Cool Whip

roasted peanuts chopped (optional garnish)

 

Begin by creaming the peanut butter, cream cheese, and powdered sugar with an electric mixer in a large mixing bowl. Add milk.

Pour the peanut butter mixture into the crust and make it level. 

Spread Cool Whip on top of the peanut butter filling with a rubber spatula.

 

Chill at least 2 hours before serving!

Add chopped nuts on top of the pie if desired.

 

OR you can use:

CHOCOLATE WAFER CRUST

  • Using a food processor, pulverize the chocolate wafer cookies into fine crumbs.
  • 1 ½ cups Chocolate Wafers (approximately 28 wafers)
  • Add the granulated sugar and melted butter then pulse until the chocolate wafer crust forms.
  • 1 tablespoon Granulated Sugar
  • 5 tablespoon unsalted Butter

  • Press the crust into the bottom and sides of a 9 inch pie plate, then place in to the freezer to chill (for a minimum of 30 minutes) while you make the pie filling.
