Famous Japanese Restaurant-Style Salad Dressing

"This is a good recipe that is easy and flavorful."
Ingredients
  • 1/2 cup minced onion
  • 1/2 cup peanut oil
  • 1/3 cup rice wine vinegar
  • 2 tablespoons water
  • 2 tablespoons minced fresh ginger root
  • 2 tablespoons minced celery
  • 2 tablespoons ketchup
  • 4 teaspoons soy sauce
  • 2 teaspoons white sugar
  • 2 teaspoons lemon juice
  • 1/2 teaspoon minced garlic
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
Directions
  1. In a blender, combine the minced onion, peanut oil, rice vinegar, water, ginger, celery, ketchup, soy sauce, sugar, lemon juice, garlic, salt and pepper . Blend on high speed for about 30 seconds or until all of the ingredients are well-pureed.

Veggie-Cashew Stir-Fry

 

1/4 cup reduced sodium soy sauce

1/4 cup water

2 tablespoons brown sugar

2 tablespoons lemon juice

2 tablespoons olive oil

1 garlic clove, minced

2 cups sliced fresh MUSHROOMS

1/4 lb. baby carrots, coarsely chopped

1 small zucchini, sliced

1 sweet red pepper, coarsely chopped

1 green pepper, coarsely chopped

4 green onions, sliced

2 cups cooked brown rice

1 can (8 oz) sliced water chestnuts, drained

1/2 cup honey-roasted cashews

 

Mix together soy sauce, water, brown sugar and lemon juice until smooth; set aside.

 

In large skillet, heat olive oil over med-hi heat.  Stir-fry garlic for 1 minute.  Add vegetables; cook until crisp-tender, 6-8 minutes.  Stir soy sauce mixture and add it to the pan.  Bring to a boil.  Add rice and water chestnuts; heat through.  Top with cashews.  Serves 4.

Ingredients

  • 1/2 pound sliced fresh mushrooms
  • 1 small onion, chopped
  • 2 teaspoons butter
  • 2 teaspoons olive oil
  • 1 garlic clove, minced
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 package (9 ounces) fresh spinach
  • 4 ounces cream cheese, cubed and softened
  • 1/2 cup shredded Parmesan cheese

Directions

  • 1. In a large cast-iron or other heavy skillet, saute mushrooms and onion in butter and oil until tender. Add the garlic, salt and pepper; cook 1 minute longer.
  • 2. Add spinach and cream cheese; cook and stir until cream cheese is smooth and spinach is wilted. Sprinkle with cheese.

Mushroom Pasta with Goat Cheese

 

INGREDIENTS
  • 16 ounces uncooked whole wheat farfalle pasta
  • 2 tablespoons butter
  • 2 tablespoons oil
  • 24 ounces fresh mushrooms, sliced (I used cremini and shiitake)
  • 1/4 cup minced garlic or shallots, or a combination of both
  • a splash of white wine (about 1/3 cup)
  • 1/2 cup heavy whipping cream
  • 1 teaspoon salt
  • 1 cup chicken or vegetable broth (as needed)
  • 1/4 cup Parmesan cheese
  • 2 cups spinach, chopped
  • 6 ounces goat cheese

INSTRUCTIONS
  1. PASTA: Cook the pasta according to package directions. Drain and set aside.
  2. MUSHROOMS: Heat the butter and oil in a large skillet or pot over medium high heat. Add the mushrooms and saute until golden brown and soft, 5-10 minutes. The mushrooms will cook down and reduce in size. Add the garlic and white wine (it should sizzle a bit) and give it a few good stirs. Add the whipping cream and salt.
  3. TOSS: In a large pot, toss the pasta with the mushroom sauce from step two. Add some or all of the broth if you feel like you want there to be more sauciness (it sort of depends on personal preference – we had it with the added broth, and without, and it was good both times).
  4. SERVE: While the pasta is still warm, stir in the Parmesan cheese. Just before serving, stir in the spinach and goat cheese, or just top each serving with a few hunks of goat cheese.

I've been distance-teaching these past three months, and spending so much time on my computer that I couldn't bear to open it to participate in the forums. Now that school is done for this year, I'm looking forward to "seeing" all of you more often.  I really enjoy our little community of cooks and bakers and I've missed all of you.

A family favorite.....❤️....

 

Oatmeal Chocolate-Chip Cookies

 

1 cup butter, softened

3/4 cup brown sugar

3/4 cup white sugar

1 1/2 teaspoons vanilla

2 eggs

2 cups flour

1 teaspoon baking soda

1 teaspoon salt

2 cups Quick-Cooking Oatmeal

2 cups (1 pkg) Nestle's Chocolate Chips

 

Cream together butter, sugars and vanilla.  Add eggs; mix.

Add flour, baking soda and salt; mix.  Add oatmeal; mix. Add chocolate-chips; mix.  Place cookie scoop portions on baking sheet.  Bake at 350 for 10-12 minutes.

 

Note.....do not over mix ....when cookies start to brown on edges, remove.  Also, I don't have luck baking these on humid days...go figure.
