This one caught me off guard because I was thinking of homemade shoestring potatoes. This recipe uses those from the can that I used to call Potato Stix when I was younger. I'm wondering if they are still available.

Crunchy Tuna Salad with Shoestring Potatoes

1 (7 ounce) can solid white tuna, drained
1 cup shredded carrot
1 cup diced celery
1/4 cup minced onion
1 cup Miracle Whip (Mayonnaise is OK but flavor is better with Miracle Whip)
1 (4 ounce) can shoestring potatoes
salt and pepper
Directions:

1 Mix all ingredients except shoe string potatoes together and refrigerate overnight.
2 Stir in shoestring potatoes just before serving.
3 Serve in lettuce lined bowl.
4 Note: cooking time is overnight refrigerating time.

Serves 4

OREO ICE CREAM CAKE

1 (15 oz) pkg Oreo cookies

1/3 c. melted butter

1/2 gal. ice cream (vanilla)

1 (16 oz) can or jar fudge topping

1 (9 oz) container of Cool Whip

Crush cookies, a few at a time. Melt butter and combine with cookie crumbs. Reserve 2 cups of crumbs for top. Press remaining crumbs in a 9" x 13" pan. Slice ice cream and press in place over crumbs. Top with fudge topping. Cover with Cool Whip. Sprinkle with reserved crumbs; cover and freeze until serving time.

Other delicious combinations: Vanilla creme cookies, butter pecan ice cream and butterscotch topping.

This was recently prepared during the KitchenAid food processor presentation:

Edamame Hummus

1 package (16 ounces) frozen shelled edamame, cooked according to package directions and cooled completely

1/2 cup coarsely chopped green onions

1/2 cup loosely packed fresh cilantro

3 to 4 tablespoons water

2 tablespoons canola oil

1-1/2 tablespoons fresh lime juice

1 tablespoon honey

2 cloves garlic

1 teaspoon salt

1/4 teaspoon freshly ground black pepper

Crackers and/or vegetable sticks

1. Assemble KitchenAid® Food Processor with large work bowl and multipurpose blade. Combine edamame, green onions, cilantro, 3 tablespoons water, oil, lime juice, honey, garlic, salt and pepper in bowl; process on high speed 1 to 2 minutes or until smooth. Add additional water if hummus is too thick.

2. Serve with crackers and vegetable sticks for dipping. Store in airtight container in refrigerator up to 4 days.

Makes 2 cups hummus

Tip: To make fruit and vegetable slices for dipping, assemble food processor with large work bowl and adjustable slicing disc; slide to third notch for medium slices. Slice cucumbers; peeled carrots; halved and seeded bell peppers; and halved and cored tart apples.

Date and Almond Brownies

2/3 cup flour

1/2 teaspoon baking powder

1/4 teaspoon salt

1/3 cup butter or margarine

2 squares baking chocolate

1 cup sugar

2 eggs, beaten

1/2 cup chopped almonds

1/2 cup chopped dates

1 teaspoon vanilla extract

Preheat oven to 350. Grease an 8 inch square pan. Sift flour, baking powder and salt together. Melt butter and chocolate in top of double boiler. Add sugar to eggs; beat well. Add butter and chocolate. Stir in flour. Add almonds, dates, and vanilla. Put into greased pan. Bake 25 minutes. Cool in pan; cut into squares or bars. Decorate with dates or almonds if desired.

Th is one makes it rounds when talking about appetizers.

13 oz. can chicken, drained well,
mixed with 8 oz. cream cheese, softened,
and one envelop Hidden Valley dry ranch dressing mix.
Combine and press together into a ball shape, cover with finely chopped walnuts, and serve with crackers.

Pioneer Woman Prairie Sushi

Ingredients

One 8-ounce package cream cheese
1 tablespoon fresh chopped basil
1 teaspoon fresh minced chives
1 tablespoon fresh chopped parsley
1 tablespoon lemon juice
Salt and freshly ground black pepper
6 taco-sized flour tortillas
1 pound thinly shaved turkey
3 carrots, julienned
1 cucumber, julienned
Directions
Mix the cream cheese, basil, chives, parsley, lemon juice, and sprinkle with salt and pepper together in a bowl. Lay out the tortillas and spread with the herb cream cheese mixture. Next, layer on the turkey, carrots and cucumber onto each tortilla. Like making sushi, roll the tortillas up tightly, then wrap in plastic wrap and refrigerate, about 1 hour. When ready to serve, unwrap the sushi rolls and slice into quarters.

Banana Bites
Sliced bananas
Peanut butter buttercream
Vanilla wafers
Chocolate

  1. Squeeze a dollop of buttercream on a banana slice.
  2. Place on wafer
  3. Add a dot of chocolate on top.
  4. Pop in your mouth and enjoy!

These can be made with any combination of bite sized cookie, fruit, pudding or frosting and/or whipped cream!

Sweet and Sassy SALSA Chicken*

4 frozen skinless chicken breasts

2 cups salsa

1/4 cup packed light brown sugar

2 Tablespoons Worcestershire Sauce

Cook frozen chicken breasts, uncovered, in greased casserole dish at 350 for one hour; remove grease/juice. Mix salsa, brown sugar, and worcestershire sauce together in a bowl. Add salsa mixture to chicken and bake an additional 1/2 hour, uncovered. Serve over rice.
