JANUARY 2026 RECIPE GAME

Oh gosh greetings Recipe Game friends and welcome to 2026!  I am off to a great start.  Had all the windows open to start this year's first game, got distracted, shut my laptop and it finally dawned on me about five minutes ago . . . hoo-boy! Smiley Embarassed

 

Well let's start the year off much better than I did with some new and maybe healthier recipes.  I don't know what you guys think but I have friends that are following special diets (Keto, low sugar, high protein etc.) and I was thinking maybe if anyone has any tried, true and test driven ones we could maybe include those recipes as well?  As always, many thanks to our friend @walker  for her always kind words and delicious recipes like this one (thank you my friend!):

 

Fresh MANGO Salsa

 

2 cups diced Roma tomatoes

1 1/2 cups diced fresh ripe MANGO

1/2 cup diced onion

1/2 cup chopped fresh cilantro

2 tablespoons fresh lime juice

2 cloves garlic, minced

1 tablespoon apple cider vinegar

1 teaspoon white sugar

1/2 teaspoon salt

1/2 teaspoon pepper

 

Combine all ingredients and refrigerate 1 hour before serving so flavors blend.

 

NEXT INGREDIENT .... ANY FRUIT OR VEGETABLE

                                    (thinking healthy for 2026😉)

@momtochloe .  My healthy fruit drink:  Buy Stop & Shop or any store bought brand of Mixed Berries.  (blueberries, blackberries & raspberries.). Put two big handfuls in your blender and let defrost.  Pour 1 1/2 cups of warm water in blender also.  Liquify the berries and drink up.  Delicious!

 

Next Ingredient: Any Vegetable.

Roasted Vegetables

 

I take a bag of frozen Broccoli, Caulliflower and Carrots....

 

Put into a Zip lock bag.  Add EVOO.  Close and shake or mush until all veggies have oil on them.  

 

Open bag.  Add Salt, Black pepper, garlic power (I use Garlic Pepper) and Thyme. 

 

Start easy...you can always add Salt & pepper later!

 

Shake & mush again until all veggies are covered well.

 

Put onto a baking sheet with Parchment paper.  Spread out into a single layer if possible.  

 

Bake at 400 F for 20-25 minutes. 

 

They are "done" when you like them that way
Crisp or well cooked!

 

I try to keep these in my fridge!  Instant meal!
