Welcome to the 2023 Recipe Game my friends!  Hope the holidays treated you well and that you had a splendid NYE.  Just to show what a party animal I am, when the fireworks went off, it dawned on me that it was the new year and I hadn't started the January thread . . . at least you know my heart is in the right place!

 

Ok, so new year, new recipes.  Please share your old favorites and maybe some new ones you recently discovered.  Many thanks to our friend @candys mine for starting us out with her delicious Date Nut Bread:

 

DATE NUT BREAD

 

1 1Lb pkg  Whole Pitted Dates

1 large Tablespoon Margarine

3/4 cup DARK BROWN SUGAR

1 beaten egg

1 tsp Maple flavouing

1/2 tsp Vanilla

11/2 cups flour

1 tsp baking soda

pinch salt

1/2 cup nuts

 

METHOD:  Cover the dates with 3/4 cup hot water and let stand Overnight.

Cream the Margarine and BROWN SUGAR, Add beaten egg, Maple and vanilla flavourings.

Mix together  Flour, baking soda and salt.  Add to the creamed mixture and beat well.

Stir in the dates and their liquid and the nuts.

Pour in a greased  8  X 4 X  21/2" pan

Bake at 350  for 50 to 60 minutes check at 50 minutes.

 

Next ingredient :  MILK  or cream

Wild Rice and Mushroom Soup

 

1 pound baby portobello mushrooms, chopped

2 tbs. olive oil

2 pkgs. (6 oz each) long grain wild rice mix

1 carton (32 oz) reduced sodium beef broth

1/2 cup water

2 cups heavy whipping cream*

 

In a Dutch oven, saute the mushrooms in oil until tender.  

Add the rice, contents of seasoning packets, broth and water.

Bring to a boil.

Reduce heat, cover and simmer for 25 minutes.

Add cream and heat through.

 

*I'm thinking half-n-half would be a little less decadent and work just as well.

 

Next ingredient: egg noodles

Hungarian Goulash

 

1/3 cup butter

1 1/2 lbs. sirloin steak, sliced or cubed

1 medium onion, diced (or less)

2 cloves garlic, minced

1 cup ketchup

4 tablespoons Burgundy or other red wine

2 tablespoons light brown sugar

1 teaspoon salt

2 teaspoons paprika

1 teaspoon dry mustard

2 cups water

6 tablespoons flour 

5 cups EGG NOODLES, cooked

 

Melt butter in large skillet; sauté beef, onions and garlic.  When meat is brown and onions tender, stir in ketchup, wine, brown sugar, salt, paprika, mustard and water.  Blend well.  Whisk in flour*, simmer for 10 minutes** over medium-low heat stirring occasionally.  Serve over cooked NOODLES.  Serves 6.

* I whisk the flour with a little extra water or liquid from     skillet  and then mix with the rest.

 

** I usually simmer about 30 minutes or longer.  You can

   enjoy some of the 🍷 while you wait...😁.

Bowtie Pasta Salad with CHICKEN, Grapes and Peas

 

1 box (12oz) bowtie pasta

1 cup mayonnaise (light or regular)

1 tablespoon Dijon Mustard

1/2 teaspoon pepper

1/2 teaspoon celery salt

2 cups cooked CHICKEN (2 breasts cut in cubes)

1/2 cup thinly sliced celery

1 cup frozen peas, rinsed and drained (optional)

1 cup red grapes, sliced in half

 

Cook pasta according to package directions.  While it cooks, whisk together the mayonnaise, mustard, pepper and celery salt in large bowl.  Add CHICKEN, celery, peas and grapes.  When pasta is done, rinse under cool water; drain well.  Add pasta to bowl and mix until all ingredients are well coated with sauce.  Adjust seasonings according to preferences.  Pasta really absorbs mayonnaise so add little more if needed.

 

Refrigerate until serving.  Serves six.  

* I also like to add sliced or slivered almonds.  I like peas    
  but good without as well (just way original recipe was 

  written.)

I have never tasted Hungarian goulash and always wanted to give it a try but thought it was a complicated recipe.  Yours seems very straightforward and easy enough for a weeknight meal. I plan to add it to my menu next week.

PARMESAN Baked Potato Halves

 

6 med/small size potatoes (scrubbed and cut in half)

1/4 cup butter

Grated PARMESAN CHEESE

Other seasonings of your personal preference

 

Preheat oven to 400 degrees.  Melt butter and pour into a 9x13" pan.  Spread evenly across bottom.  Generously sprinkle PARMESAN CHEESE and lightly sprinkle other seasonings as well.  Place potato halves face down on butter and seasonings.  Bake 40-45 minutes.  Cool for 5 minutes before removing from pan.  If desired, serve with side of sour cream.

Thank you. Just last night, salmon, yellow squash and baked potatoes were on my dinner menu. It turned out that the potatoes were HUMONGOUS, so I par cooked one of them in the microwave, then cut it in half, seasoned it with olive oil, salt and pepper and baked it for about half an hour. It was tasty enough, but your recipe sounds so much better.  My hubby has very little appetite and is turned off if I put too much food in front of him. I think he'd really enjoy your method.

Southwestern Salad

 

1 can pinto beans, rinsed and drained

1 bunch green onions with tops, sliced

1 large tomato, seeded and chopped

1 ripe avocado, chopped

1 bottle (8oz) Catalina Salad Dressing, divided

1 1/2-2 cups shredded cheddar cheese

1 medium head LETTUCE, torn into bite-size pieces

3-4 cups corn chips

 

In large salad bowl, toss together the beans, green onions, tomato, avocado and half of the Catalina Dressing.  Top with cheese and then LETTUCE.  Refrigerate.  Just before serving, add corn chips on top.  Serve with remaining Catalina Dressing on side.

Sloppy Joe Nachos

from Taste of Home

 

1 lb. ground beef

1 can (15 oz) sloppy joe sauce

1 pkg. (12 oz) tortilla chips

3/4 cups shredded cheddar cheese

1/4 cup sliced olives (optional)

 

1. In a large skillet, cook beef over medium heat until no longer pink. Drain. Add the sloppy joe sauce, cook uncovered for 5 minutes until heated through.

2. Arrange the tortilla chips on a serving plate.  Top with meat mixture, cheese and olives if desired.

 

Next ingredient: any frozen vegetable
