Oh, my!  I love potatoes and I love pesto! Why hadn't I thought of that myself?  I can't wait to have an opportunity to make that recipe!  Thank you!

FYI....and, especially @house_cat ...another time you wondered.....I am back to being "walker" on the boards!  Not my change but I did update my account and when I did I came back to just "walker"!  I started out as ....walker....was changed to Qwalker....now I am back to being "walker"!  I am so confused!!  🤣🤣

Pork NOODLE Casserole

 

2 cups uncooked egg NOODLES

2 lbs. boneless pork, cut into cubes

1-2* medium onions, chopped (*whatever amt. you like)

2 cans whole kernel corn, drained

2 cans cream of mushroom soup, undiluted

1/2 teaspoon salt

1/2 teaspoon pepper

 

Cook NOODLES according to package directions.  In a large pan or skillet, cook pork and onions over medium heat until meat is no longer pink.  Drain NOODLES.  Stir NOODLES, corn, soup, salt and pepper into pork mixture. Transfer to a greased 3 quart baking dish.  Cover and bake at 350 for 30 minutes.  Uncover and bake 15 minutes longer.  Serves 4-6.

 

(Note...this makes a lot but can easily be cut in half.)

Okay, I didn't realize there was any link when I copied this recipe for broth, so let me try again just typing it.

 

I had said @momtochloe shared this recipe with me but I was chicken to try it!

 

Pepperocinis and juice in chicken soup?

 

What do you all think???

 

Mississippi Chicken noodle soup (Slow cooker)

 

2 boneless chix chests

1) 1 oz pkg dry ranch dressing mix

1) 1 oz packet Au Jus gravy mix

2 stalks of celery, diced

2 carrots peeled and diced

4 cups chicken broth

1 cup jarred sliced pepperoncini peppers

1/4 cup jarred pepperoncini juice

2 cups UNcooked med egg noodles.

 
Place the chicken in the slow cooker.  Add everything else EXCEPT the noodles.
 
Cook on low 6-8 hours, until chicked is cooked.
 
Remove chicken, shred with forks and return to crock.
 
Add noodles to slow cooker.  Cover and cook on low 15-30 mins until noodles are tender.

@Zhills ..... in December you posted a recipe for Chicken, Corn, Potato Soup.  I finally got around to making it.  Delicious!!!  Loved it!!!  Thank you!  

@RespectLife ...thanks for repeating your soup recipe...sounds like another good one to try!! I just have to convince DH to try it with the pepperoncini peppers and juice!   A lot of winter yet to go for more soup!

Pork Chops in MUSHROOM Gravy

 

2 (1" thick) loin pork chops

2 tablespoons all-purpose flour

1 teaspoon paprika

salt and pepper to taste

1 tablespoon oil

1 small onion, minced

1/2 green bell pepper, minced

6-8 MUSHROOMS, chopped

1 cup milk

juice of 1/2 lemon

 

Remove any excess fat from edge of chops.  Combine flour, paprika, salt and pepper; dredge chops in mixture.  Set aside remaining flour mixture.  Brown chops in oil and remove to shallow casserole dish.  Add onion, green pepper and MUSHROOMS to skillet, sauté until soft.  Add reserved flour mixture; cook, stirring 3 minutes.  Blend in milk and cook until thickened, stirring constantly.  Stir in lemon juice.  Pour sauce over chops; cover and bake at 350 for 1 hour.  Remove cover and bake 10 minutes more.

PAN ROASTED LEMON POTATOES WITH DILL

(10 mins)


Ingredients

  • 1 lb. baby red or yellow potatoes
  • 3 to 4 tbsp. butter
  • 1 lemon, juice of
  • 2 tsp fresh snipped dill (optional)
  • Salt and pepper to taste

Instructions

  1. Place the whole potatoes in a shallow, microwave safe glass bowl in a single layer (you may need to do two batches if they don't all fit). Cover the bowl with plastic wrap, making sure to the potatoes are not touching the plastic wrap.
  2. Microwave on high for 4 minutes and 30 seconds. Be careful when removing from microwave, as the dish will be very hot. Uncover and slice each potato in half.
  3. Meanwhile heat a large cast iron skillet over medium heat. When the skillet is hot toss in the potatoes, 3 tbsp of butter and 1/2 of the lemon juice, stir to coat the potatoes. Season with salt and pepper, and the dill. Let the potatoes caramelize in the pan, by stirring just twice per minute, until they are golden brown on all sides. Add more butter and more lemon juice if desired. Enjoy!
