Sour Cream Mashed Sweet Potatoes
Sour Cream Mashed Sweet Potatoes are a super creamy, low carb side dish that pairs well with any fall meal.
Place sweet potatoes in a large pot and cover with water. Add 1 tablepsoon salt and bring to a boil. Reduce heat and simmer 15 to 20 minutes or until tender. Drain potatoes and return to pot.
Add butter, sour cream, salt, pepper, and paprika and mash with a potato masher. Serve.

Bean Salad
1 can yellow wax beans, drained
1 can green beans, drained
1 can dark red kidney beans, rinsed and drained
1 can garbanzos (chick peas), rinsed and drained
1 can yellow hominy, rinsed and drained
1/2 green bell pepper, diced
1/2 red bell pepper, diced
3 green onions, sliced
1/2 cup sugar
1/3 cup oil
3/4 cup vinegar
1/2 teaspoon tarragon flakes
1/2 teaspoon basil flakes
1/2 teaspoons salt
1/4 teaspoon pepper
Place first eight ingredients in a large bowl.
Thoroughly mix sugar, salad oil and vinegar with salt, pepper, tarragon and basil flakes. Pour over the vegetables, tossing evenly. Cover and set in the refrigerator at least 8 hours or overnight, turning two or three times during this period.

I don't normally post such complicated recipes, but this one looks too good to ignore.
You can click here for the specifics of the recipe if you are interested. I think this is one that lends itself to shortcuts like canned pie filling and salted caramel sauce from a jar. I plan on making it from scratch, next chance I get!
I know my Game Night friends will love it!

Chicken Parmesan CRESCENTS
8 chicken tender strips, cooked
1 pkg. CRESCENT ROLLS
4 slices of mozzarella cheese
1 (24 oz) jar spaghetti sauce
1-2 tablespoons butter, melted
1/4 teaspoon garlic powder
1/2 teaspoon Italian Seasoning
1 tablespoon grated Parmesan cheese
Preheat oven to 375. Warm spaghetti sauce. Separate CRESCENT ROLLS into 8 triangles. Cut each slice of cheese in half. Place one piece of cheese on wide end of roll. Dip each cooked chicken strip in warm spaghetti sauce and place on top of cheese; roll up. Place on ungreased cookie sheet. Brush with melted butter and sprinkle garlic powder, Italian Seasoning and Parmesan cheese on top. Bake 15 minutes or until golden. Serve with extra spaghetti sauce on side, if desired.
This is an easy recipe to double. If you like a lot of cheese, use 8 slices of mozzarella cheese and use one whole slice per serving.

My husband will love that recipe! There are so few things that he likes, but I can wrap any of them in a crescent roll and he goes bonkers for it, lol! I recently made hot dog and cheese crescents and meatball parm crescents and judging by his reaction you would have thought I'd slaved all day! I will surely be making your chicken parm crescents.

Vegetable Curry Dip
1 cup mayonnaise
2 teaspoons onion flakes
1 teaspoon horseradish
1 teaspoon tarragon vinegar
1 teaspoon curry powder
1 teaspoon garlic salt
Mix well in a glass container or jar. Make a day ahead. Serve with mixed raw vegetables.

I just want to report that I made the salted caramel apple pie bars yesterday. I didn't taste them... not my favorite thing and I don't waste calories on things I don't love, but my guests and my DH said they were excellent.
