I found this recipe in my grandmother's collection and have been making them a while. This makes a lot - sometimes I'll cut in half. It's a bit odd because it doesn't call for mixing the wet ingredients first. I follow the instructions and they always come out good.

Italian Lemon Knots

5 cups flour

3 eggs

1 cup milk

1 bottle (1 oz) lemon extract

Grated lemon rind from 1-2 lemons

5 t baking powder

1 cup sugar

1 1/3 cups shortening

Mix together flour, eggs, milk, lemon extract, rind, sugar and baking powder in large bowl. Add shortening until a dough is formed. You may need to add either more milk or flour to get a dough you can work with. Take golf ball* size pieces and roll into a log and either twist them or shape into a knot. You can also roll them into balls. Bake at 350 degrees for 12-15 minutes. They should be just lightly brown on bottom.

When cool, ice with a glaze of confectioner sugar, milk and lemon rind. Sprinkle with colored sprinkles.

*I'll usually make them a bit smaller than golf ball size.
