/>

Italian Garlic Butter
(recipe source: Kleinworth & Co.)

I know that this is probably a silly 'recipe', however, it's truly scrumptious! You could use this on breads, in pastas, in sauces and so many more things. There is just something about the garlic with the parmesan that puts this over the top. It stores really well in the refrigerator and in the freezer. Trust me on this one, you'll be surprised at how often you reach for it.

2 cups salted butter (4 sticks)
2 tablespoons garlic paste
1/4 teaspoon freshly ground black pepper
1/3 cup grated Parmesan cheese
1 tablespoons dried or fresh finely chopped parsley

Add your butter to you mixer bowl & beat on high for several minutes using the paddle attachment. (don't use the whip- trust me on this)

After the butter is somewhat soft- add in your other ingredients & continue beating another several minutes. Transfer to an airtight container & store refrigerated as you would your regular butter.

Hi LoLa! This doesn't sound silly at all! It's right up my alley. I like the addition of Parmesan to the mix! Thank you very much.

I use a similar recipe that I found awhile ago, and put blobs of it in ice cube trays, and after frozen, pop them out & keep in a Ziploc baggie in the freezer. At first, I tried using it primarily for sauteing, but had to be careful that the garlic didn't scorch. So, now, I drop in a blob right near the end of the sauteing process, & it adds a nice flavor. I've also heated it, added some white wine & tossed it w/ pasta & Parmesan for a quick side dish.

Ingredients
1 cup whole butter
1 cup extra virgin olive oil
2 Tbsp fresh garlic, minced
1 Tbsp fresh basil, chopped
1 Tbsp fresh parsley, chopped
a few dashes red pepper flakes
½ tsp salt
½ tsp black pepper
1 Tbsp lemon juice

Instructions
Let butter rest at room temperature until softened.
Rough chop the basil and parsley – set aside.
In a mixing bowl, whip butter for about 2 minutes until fluffy.
Turn mixer off and add garlic, basil, parsley, red pepper flakes, lemon juice, salt and pepper.
Turn the mixer on to medium to low and slowly add the extra virgin olive oil so all ingredients are combined.
Store in an air tight container.

I made a recipe almost identical to this except it had a couple of tablespoons of crumbled Gorgonzola added. It was delicious. The blue cheese adds a rich but subtle flavor.
