Italian Chicken Bake

This was probably one of the easiest dishes that I've tried in a long time. It's actually why I attempted it. I'm still recovering from Thanksgiving..lol The marinated artichokes are just delicious is this dish. I served it with a salad and some crusty bread for a little dipping (shh..don't tell!).


6 chicken thighs – (bone in or out will work – just adjust cooking time) If using breasts, adjust time as well.
1 8oz jar marinated artichoke hearts – drained well
1 14.5 oz can roasted tomatoes – drained well
2 cloves garlic – chopped
2 tablespoons flour
2 tablespoons olive oil
1/2 teaspoon salt
1/4 teaspoon pepper
1 cup grated mozzarella or Parmesan
basil or parsley for garnish

Preheat oven to 350 degrees. Coat a 9 x 9 baking dish with non stick spray. Place chicken in baking dish. In mixing bowl, combine all other ingredients. Pour over chicken.

Bake for 40 minutes or until chicken is completely cooked through. Top with cheese and bake an additional 5 minutes. Garnish with chopped fresh basil or parsley if desired.
