I would REALLY appreciate knowing what flour or combinations of flours you substitue for AP flour in this recipe, as I've antigens to gluten, so must now eat GF.

We started getting interested in GF eating last summer. We're not 100% converted yet, but becoming more aware all the time and trying or best. I stumbled on a packaged flour blend by Namaste at Costco one day and thought I'd give it a shot for Texas Sheet Cake since blending flours and adding other things just seemed to be such a monkey business, not to mention costly. We have family who have completely adopted a GF and sugar free (as much as possible) diet. One of my niece's favorite things in life is my Texas Sheet Cake. Her mother (my sister) can follow the exact same recipe and my niece will know the difference of who made it. Granted you can't do much about the sugar content, but she was both thrilled and impressed with the results when I used the Namaste Flour Blend. I've continued to buy that and have been using whenever a recipe calls for flour. It measures cup for cup.

I cannot thank you enough for getting back to me on this GF flour challenge I'm having. We go to Costco on a regular basis, so am hopeful that our Costco up here in Oregon carries the Namaste GF flour.

And, you're right about all the monkey business entailed in blending different flours and related ingredients to get an AP-like flour. The first book I purchased on the GF subject had a "recipe" for making your own AP flour. I wrote all of the ingredients down and headed to Amazon. It was going to cost me over $150 to get myself started in making my first batch of AP flour!!! And, I would probably get 10 lbs out it, if that.

So, I'm going to be looking for Namaste in the next few days, as we just went to Costco yesterday.

I am so excited about this! (I'm a baker, you see. Got blue ribbons...and haven't been able to do hardly any baking since I came up reactive to gluten about a year and a half ago.)

You're very welcome. I hope you can find it, too! I should have mentioned, my niece uses Pamela's. I think it's a rice flour. I have no experience with it, but I'm pretty sure it also measures cup for cup without any of the additional hassle.
